Untold Story shows intensity the moment it hits the glass with a deeply colored purple core that’s almost opaque. The color speaks to the power of the aromatics: rich black fruits, dark blackberry, plum and cassis swirl about, picking up graphite and crushed herbs with air. The layered palate is hedonistically plush, but still balanced thanks to fresh acidity and a fine tannic backbone. The lengthy finish carries a delightful mix of fresh herbs, crushed berries and spice. In a word, this wine is yummy.

The Black Oak Cabernet Sauvignon is garnet red in color, refreshing and inviting to the palate. The wine’s aromas are layered with rich plum notes and a warm cedar component. DAOU Vineyards Bodyguard Red is made from 65% Petit Verdot, 35% Petite Sirah.
The 2020 Bodyguard is the newest edition to this exceptional collection from winemaker Daniel Daou. Bold and brooding, it displays a vivid, deep purple hue accompanied by an intense nose of chocolate-covered blueberry, black raspberry, Zante currant, pencil lead and damp forest floor. Secondary layers reveal notes of kirsch, fennel, black olive and a hint of cool wintergreen. 2021 was a benchmark vintage for Cabernet in Paso Robles. The long, cool growing season was ideal for our Bordeaux grapes and allowed them to slowly ripen, creating complex flavors and wines built to age. Chappellet Pritchard Hill Estate Vineyard Cabernet Sauvignon is made from 95% Cabernet Sauvignon & 5% Petit Verdot.
Chappellet's Pritchard Hill Cabernet Sauvignon has been, since the beginning of their winemaking career, the most sought after wine of their portfolio. The wine is truly a love letter to the winegrowing potential of Pritchard Hill. The wine was inspired by Bordeaux, and like most left bank Bordeaux, the wine is a blend of predominately Cabernet Sauvignon with remaining amounts other classic Bordeaux blend varieties. The vines grow upon rocky, mountainside vineyards. After harvest and fermentation, the wine was aged for 22 months in 100% new French oak barrels.

Such an attractive and alluring bouquet of violet florals, blue fruit aromatics, sagebrush, bay laurel, and toasty cedarwood. Medium to full-bodied with a wonderfully rich fruit-forward palate of succulent blackberry, plums, and black cherry, nuanced by an inviting minerality with an ironstone quality laced by dried sage. This is, as usual, a beauty, perhaps more so thanks to a great vintage. It is classically Napa Valley, and classically “house styled” by Aron Weinkauf, with black and blue fruit, supple, approachable tannin structure and great depth of aroma and flavor. That said, keep in mind that this isn’t the winery flagship offering. Even in this price range Lyndenhurst is always a solid value, and is so again – maybe even a little more than usual. Decant well if you crack into this in the near term, or age it for the long term. Contains 10.6% Merlot, 3.8% Petit Verdot, 3.5% Cabernet Franc and 2.9% Malbec. (Rich Cook)

Bernardins Dry Muscat Dore des Bernardins is made from 100% white Muscat petit grains.
Doré des Bernardins is a dry white wine that is only produced in years when the Muscat à petit grains crop is large enough. Grapes are picked at the same ripeness level as for the Vin Doux Naturel. In contrast to Muscat de Beaumes de Venise, the fermentation isn’t stopped, giving a fruity dry wine with intense Muscat aromas.
Dry Muscat with a fruity, nice perfume, honeysuckle and melon aromas, lively rounded mouth-feel. Elegant, fresh and medium-bodied.
Situation
Spreads out over the south-east side of the Dentelles de Montmirail hills, in Beaumes de Venise in the southern part of the Rhone valley.
Terroir
On a poor sandy, hungry and arid soil consisting of tender limestone and gritty zones of sandy mollasse.
In the vineyard
The vineyards and their terroir are the essence of our wines. This is where everything starts and where we focus our efforts throughout the year. You can’t make great wine without great grapes.
The viticulture is essentially done by hand. Five people work full-time in the vineyards. They are supplemented by seasonal employees who work during bunch thinning and the harvest in order to bring out the very best in our vines. Working by hand and the attention each vine gets are fundamental. Pruning, de-budding, trellising, leaf removal and picking are thus carried out by hand with the utmost care.
We prepare the soil by using good old-fashioned ploughing. Organic compost is made from grape marc (the discarded stalks and skins).
As a way of protecting the plants, we only use phytosanitary products when necessary and within strict guidelines by staggering the treatments appropriately, to minimise the amount of chemicals used. We prefer to use as much as possible manual and organic techniques. Leaving natural grass cover, removing buds and leaves from the vines, preserving biodiversity around the vineyard: olive, almond and cypress trees, wild rosemary and capers.
Winemaking
Our Doré des Bernardins is a dry white wine that we only produce in years when the Muscat à petits grains crop is large enough. We pick the grapes at the same ripeness level as for the Vin Doux Naturel. In contrast to Muscat de Beaumes, the fermentation isn’t stopped, giving a fruity dry wine with intense Muscat aromas.
Nicely chilled, this dry white wine is great as an aperitif or with asparagus, seafood, king prawns, fish.
