Shimane is located in the western part of Chugoku region in Honshu, Japan. The region is deemed to be the second most populated prefecture in Japan. Shimane has sub-tropical climate, characterized by cold, snowy, gloomy winters and warm, humid summers. Shimane is surrounded with mountainous terrains so rice farming is a major aspect of the region. Since rice farming is a major part of Shimane, it is considered to be the birthplace of sake in Japan. The Gohyakumangoku is popular sake rice that is grown locally in Shimane.
The region has about 34 sake breweries. You can find a lot of sake production particularly in areas of Masuda, Yasugi, Oki Islands and Izumo Taisha. Shimane has great variety of sake, such as Kokki, Toyonoaki, Rihaku, Tenkai, Kamofuku, Inenotsuyu, Uijin and many more. Sake in the Shimane region has long history that dates back in mythology. Regardless of its complex history, Shimane is considered a popular place for sake consumption.
Sake By Kysela has been a project in the making for three years now. In the end, we selected a Sake made from the famous Yamada Nishiki rice produced in the Southern Prefecture of Shimane. Flavorful, rich, and clean; this sake is best as an aperitif or with seafood like fluke, dover sole or halibut. Kanpai!!!

Belle Glos Eulenoch Pinot Noir is made from 100 percent Pinot Noir.
Ruby red with aromas of ripe cherry and juicy blackberry with hints of cocoa. Rich and opulent offering flavors of bakers chocolate, blackberry, and sweet pipe tobacco. Well rounded with supple, refined tannins and a mouthwatering, long finish.

Brimming with boysenberry, lavender, and black tea, this expressive, well-structured Pinot Noir made with freerun juice aged in (60% new French oak for nine months is equal parts juicy, dense, energetic, and glossy. Sweet tobacco, vanilla wafer, and pomegranate align with supple tannins. Delicious.

Charles Heidsieck Vintage Brut is made from 57% Pinot Noir, 43% Chardonnay.
A beautiful golden robe offers glints of green accentuated by a delicate, dynamic effervescence. The initial nose introduces intense toasted and smoky notes along with ripe fruit. When swirled in the glass, the nose takes on a heartier dimension with touches of apricot and vineyard peaches. The aromatic concentration, due to a heat wave of several weeks, is reminiscent of the summer sun. The attack is taut and decisive. the creamy texture, the crisp fruitiness and spiced notes of cinnamon, licorice and pepper are the hallmark of the House style.

Aged for eight years on the lees before disgorgement, the Champagne is deliciously toasty with acidity and fine dryness.

Disgorged in January of 2023, the 2013 Champagne Millésime Brut was the last vintage from the cellar master for Heidsieck prior to Cyril Brun. The 2013 Champagne Millésime Brut is a bright straw yellow color and is based on the crus of Les Mesnil, Avize, Averney, and Aÿ. It’s fresh with aromas of wet stones, fresh quince, and fresh jasmine flowers. It has a chalky and focused texture, with ripeness to balance it out, and a long, graceful finish. At this stage, it feels more forward with 57% Pinot Noir and the rest Chardonnay. A more mineral-tinged expression, it has a lot of charm and the promise of longevity over the coming two decades. Drink 2024-2044. It will be interesting to see how the Pinot shows itself over time. 8 grams per liter dosage.
