A Spanish wine crafted close to the town of Jerez de la Frontera, Sherry is a popular white wine that is made mostly out of the Palomino grape variety. The origin of Sherry comes from a location of a lot of hills and has been crafted in an array of various types. This wine has been crafted since the 16th century and has been a successful export wine, typically brought to countries such as England, and then exported all over the globe. The town of Jerez has been a popular spot for vine growing since the art of wine producing was brought to Spain around 1100 B.C. When the Roman Empire took control of the area, the process was continued. The technique of distallation was brought to the region by the Moorish people, which led to the creation of brandy. During that time, Jerez was also called by the term Sherish, which lends to the name of the Spanish wine Sherry. Winemaking continued through the centuries, making this region one of the richest wine-producing regions in the world. Today, the wine is crafted in around 10 million cases. The wine is said to be a taste that one has to get acquainted with, because of its possible salty and robust flavor. Currently, there is a trend underway to increase the popularity of this wine due to its large supply and rich history.

Dark mahogany. Aromas of dried fruits, oak and raising notes. Smooth, well balanced, rich and complex with a long after taste.
To be served on its own at room temperature, chilled from the fridge or over ice 'on the rocks'. Also a superb way to accompany desserts, pastries and cured cheeses.
Yellow strawâ€colored, medium low intensity. Pungent, delicate and complex, with clear almonds notes and autolysis. The mouth is slightly soft, wityhout being sweet, the palate is round and fat with an excellent structure, volume and character but at the same time, the wine is still very fresh and saline. Long finish for this persistent wine.
As aperitif, while cooking, and accompanying the whole meal with it. It is ideal matching seafood and products of saline flavour and with acidity.

It is a very pleasant aperitif and can accompany meat and game dishes, or to serve with mature cheese.

Paul Hobbs Beckstoffer To Kalon Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Farmed with a unique precision to match the unparalleled terroir of this historic Oakville site, this vintage is ethereal, delicate, and nuanced. An attractive deep garnet in appearance, this wine expresses soft red cherry, strawberry, floral, and graphite. The palate is full and lively with flavors of blueberry, blackberry, sandalwood, and dried herbs, supported by a lovely grip of tannins and well-tensioned texture that leads to a long, refined finish.
Review:
Blackcurrants, black cherries, ripe raspberries and tar. Some graphite, too. It’s full-bodied and very plush with crushed tannins and an airy mouth-feel. Just floats across the palate. So fine. It has a second finish at the end, where the tannins emerge at the front of the palate. Quite unique. Drinkable now, but Best after 2027.

More expressive and open-knit, the 2019 Cabernet Sauvignon Beckstoffer To Kalon Vineyard sports a similar ruby/purple to go with an incredible array of black raspberry, cassis, flowery incense, orange blossom, smoked tobacco, and exotic spice. As are all To Kolans, it's incredibly perfumed and complex aromatically, and it's one of those wines that changes every time you come back to the glass. Full-bodied on the palate, it offers beautiful richness and depth, a light, graceful mouthfeel, silky tannins, and a heavenly finish. It's another magical wine from this talented winemaker that readers will absolutely love.

The wine’s aromas and flavors are akin to red and black cherry, briary wild berries, pomegranate, dried rose, pepper and licorice. Significant umami notes develop with time, and it offers a chewy core of fruit on a lovely expanding palate. Despite its obvious richness, there’s polish and definition to the flavors and structure. The wine turns spicy and savory on its long finish. Drink between late-2024 and 2032.
We’ve produced Ryan Pinot Noir since 2002, and it has always focused upon the mature dry-farmed Dutton-Widdoes Vineyard, deep in the heart of Green Valley. Widdoes produces a wild berry, truffley style of rich, dark Pinot that offers substantial hidden complexity which is revealed over time. In recent years we’ve balanced this power style with a block of vibrant, elegant, and red-fruited Pinot from Dutton-Jentoft, located at higher elevation closer to the coast. Both vineyards are sensitively farmed by our long-time partners, the multi-generational Dutton Family. Traditionally our most fruit-filled and approachable Pinot bottling, history shows that the wine ages gracefully for a decade-plus, revealing all its quintessential Green Valley Pinot beauty as it develops in bottle.

From the oldest vines of the estate, the 2022 Pinot Noir DuMOL Ryan is fantastic on the nose, with notes of fresh leather, Asian spices, sandalwood, and fresh cherries. The palate is vibrant and salty with green valley character, revealing finely coiled tannins, mouthwatering acidity, a saline mineral flourish, and a long finish. This one of the most compelling wines in the vintage for me, and it’s going to age gracefully over the next 15-20 years.
