Thibaut-Janisson Blanc de Chardonnay is made from 100% Chardonnay
Appellation 100% Virginia
Winemaking Notes The grapes are handpicked in small baskets late August and are gently pressed as whole clusters. After a settling of 24 hours, the juice is inoculated with selected Champagne yeast and ferments in stainless steel tanks at low temperature. Once the fermentation is over, the wine ages on the fine lees until the spring of the following year. The blend is then put together and cold-stabilized prior to bottling. The bottling occurs in the spring when the cellar temperature is conducive to a second fermentation in the bottle. The now sparkling wine will age on the yeast for over 24 months. At disgorging, a small amount of dosage liquor is added in order to balance the natural acidity.

The complex layers of fruit is in perfect harmony with the oak, all bound together by a lively seam of acidity. The finish is pleasantly dry and savory, with lingering notes of Christmas cake and vanilla pod.

The high slopes are quite steep, reaching 68% in some places, requiring that the harvest be done by abseiling or roping down. Perfect for aging, these wines will reveal even more qualities after several years in the cellar.

Wolfberger Auxerrois is made from 100% Auxerrois
Auxerrois blanc is thought to have originated in Lorraine, rather than near Auxerre in the Yonne. Recent DNA fingerprinting suggests that it is a cross between Gouais blanc and Pinot noir, the same ancestry as Chardonnay. The name Auxerrois blanc has actually been used as a synonym for Chardonnay in the Moselle region in France, which explains why there is also a longer name (Auxerrois Blanc de Laquenexy) for the grape variety.
This pale yellow Auxerrois Pinot Blanc shows an intense nose of fresh white fruits, rhubarb and spring flowers. Easy to drink and fresh on the palate, this wine ends on a fruity and crunchiness tast.
Alcoholic fermentation at 16°C followed by a short fermentation at 18°C allowing to keep some crispiness to the wine.
Then the wine was aged on the fine lees for 6-7 months. No Oak.
No Malo-Lactic fermentation.
Right before bottling, the wine was filtered using a tangentiel filtration system.

A light purple in hue, the precise, expressive nose presents notes of green pepper, blackcurrant and ash with hints of jalapeño. Smooth with a broad palate, the flow is corseted a little by the mild freshness, as is the bold finish. A delicate red of a kind you rarely see in a Cabernet Franc. - Joaquín Hidalgo"

"The 2018 Viré-Clessé Quintaine is showing beautifully, wafting from the glass with a lovely bouquet of honeyed citrus fruit, fresh pastry and orange blossom. Medium to full-bodied, satiny and supple, it's elegantly textural and refined, with a fragrant core of fruit and a long, penetrating finish. Even though it will reward a bit of bottle age, it's slightly finer-boned than the more concentrated, muscular 2017, so I would opt to drink this immensely charming wine before its older sibling. – William Kelley"
