Pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

Carmo Vinhos Madeira Monte Secco

A light pale, dry wine, which is best served well chilled or on the rocks or even as a long drink with tonic. A fragrant delicate wine that is crisply dry and fruity. It makes a perfect aperitif to accompany canapés.

Cave Carod Clairette de Die

Cave Carod Clairette de Die is made from 75% Muscat Petits Grains and 25% Clairette. Clairette de Die is produced with the ancestral dioise method. 
The grapes are rapidly pressed after the harvest and then placed in vats at low temperatures (replicating the process used by the Voconces in ancient times who kept the jars in the icy waters of their local rivers). The half-fermented must is bottled and fermentation continues in the bottle, giving a naturally sparkling wine. Disgorging occurs at least six months after bottling, while the wine still contains sugar and has reached an alcohol content of 7 to 9 %.

This is a sparkling wine with very fine bubbles, light in alcohol (8°), and containing residual sugar (incomplete fermentation). Clairette de Die has been known since ancient times (dates back to 77 A.D.). Clairette brings delicacy and lightness to the wine whereas Muscat gives its typical sweet flavor. The wine displays intense aromas, a refreshing balance of fruit and acidity with peach, orange and white flowers flavors.
This is an ideal wine for all desserts and ice creams, and is very interesting with foie gras. It is especially suitable for daytime meetings and cocktail parties.  A great breakfast wine!
Wine to be consumed young, to conserve the full fruity and floral flavors.  To be stored flat in a cool room away from light.

Caymus California Cabernet Sauvignon 2022

I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.

A small release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet. 

Caymus Suisun The Walking Fool 2021

This new red wine blend is produced from Suisun Valley, a remarkable AVA that has become the Wagner family’s second home. A 30-minute drive from Napa, Suisun has ideal soils and climate for a variety of grapes. The Walking Fool is named after a long-ago relative who was often seen traveling by foot – thus earning this affectionate moniker. Featuring Zinfandel and Petite Sirah, this wine is smooth and lively, with juicy raspberry, notes of espresso and softly fine tannins.

Cellier du Chateau de la Chaume Bourgogne Aligote 2023

Aligoté is a grape variety that adapts very well to different types of soils. The color is a pale gold yellow; this wine is clear and young. This a gourmet wine and surprising by his energy, offering acid and fruit hints.

Paired with grilled fish, asparagus, white meat in sauce.


Ceretto Barbaresco 2020

Ceretto Barbaresco DOCG is made from 100 percent Nebbiolo. 

If we could sum this wine up in a single word, we wouldn’t hesitate to define it as “classic”. As tradition suggests, this Barbaresco is the fruit of the assembly of several parcels of land, coming from some of our most beautiful vineyards. The idea is that of naturally obtaining balance by harmonizing different expressions, often contrasting ones. The result is a liquid expression of a terroir, tempting and typical, a synopsis of one Langa, that of Barbaresco, which moves in the glass, alternating between structure and elegance.


 

Review:

Very aromatic with orange blossom, roses and iron. Medium-bodied with very fine tannins. Refined and beautiful. Drink now or hold.

Cholet Puligny-Montrachet 2022

This is a classic expression of Puligny-Montrachet, where the moderate influence of the oak helps to maintain the subtle floral and fruity aromas of the appellation.

Cholet Saint Romain Rouge La Velle 2020

"Sous la Velle" takes its name from its location 'under the village' of Saint Romain. The vineyards enjoy a steep and south facing exposure, planted on marl scree with the vines taking root in the limestone and offering a beautiful minerality to the wine. The nose expresses small red and black fruits, blackcurrant, cherry, raspberry and violet. The mouth provides a rich, supple and elegant wine with a good structure, pure fruit and vibrant acidity.

After destalking the grapes, the juice, skin and pulp are put into the vat for cold maceration. It lasts from 15 to 18 days. The alcoholic fermentation will follow, lasting from 5 to 6 days. These steps may be punctuated by push-downs. Aging in oak for 12 months.

Colmant Brut Chardonnay NV

Colmant Brut Chardonnay is made from 100 percent Chardonnay (Franschhoek and Robertson). 
15% of the base wine has been barrel fermented.
Ageing: This wine spends a minimum of 45 months on the lees at a consistent temperature of 14C before degorgement.
Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time. 
Drinking tips: Ideal with pan fried scallops or line fish "au beurre blanc", it is also the oyster's best friend and will enhance the flavors of parmesan, asparagus, artichokes, parma ham,…

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. The wine is thoughtful and focused, and the finish leaves my mouth watering; there is serious acidity here, and they are doing it right. Colmant is the little guy doing some really great things— quietly focused wines, with serious aging potential. Keep this small producer on your radar. Destroyer North Coast Red 2020

Destroyer North Coast Red is made from 65% Cabernet Sauvignon 20% Merlot 10% Zinfandel 5% Syrah

DESTROYER Red Wine Blend is a whimsical blend of North Coast varieties. We start with Cabernet Sauvignon 65%, and then add Merlot 20%, Zinfandel 10% and finish with Syrah 5%. 65% is grown in Lake County in the Red Hills AVA, the balance is Napa Valley. This wine is aged in French oak for 10 months.


DESTROYER is rich and flavorful. Red and dark fruits are apparent in the nose with Plum, Cherry and Blueberry tones. The aroma is elegant and shows subtle signs of oak nuance. The pallet explodes with deep deliciousness! The finish lingers and invites a second glass or two. Invite your favorite friends to try, and share with your hottest date.


Domaine Corne Loup Tavel Rose 2023

Corne Loup Tavel Rose is made from  60% Grenache, 15% Cinsault, 10% Syrah, 15% mix of Mourvèdre, Clairette & Carignan

Elegant, refreshing, food-friendly and versatile, this Tavel offers mouth-watering aromas of strawberry and berry pie.


Corne Loup Tavel represents the pinnacle of the rose pyramid quality wise that can be achieved in the Southern Rhone. The town of Tavel has been famous for its rose wine since the time of the Popes in Avignon (1300's). Tavel is about 2,300 acres in size and produces about 500,000 cases yearly of 9 liter cases, plus can age for 2-3 years, unlike many other roses. Produced from a blend of  Grenache, Cinsualt, Syrah, Mourvedre, Cinsault and Carignan, the wine comes from a famous sub-parcel called the Plateau de Vallongue between Tavel and Lirac AOC's.


The 20 hectare-vineyards are located in the hamlets of Oliver, Campet, Vestides and Vallongue. The Tavel from this producer is a blend of all 3 soils types you can find in the AOC:


  • Vestides is located West of the village of Tavel. The terroir is made of flat white stones.
  • Vallongue is located Northeast of the Village of Tavel. The terroir is similar to Chateauneuf du Pape, with a lot of pebble stones. (Galets Roules).
  • Olivet is located South-East of the village of Tavel. The terroir is made of sandy soils and some stones.


Dry and lively, it is an ideal wine for barbecues as it makes a wonderful sipper that's also capable of matching with a wide variety of summer foods, including grilled chicken, seafood and summer salads

Domaine de la Janasse Chateauneuf-du-Pape Cuvee Vieilles Vignes 2020

Domaine de la Janasse Chateauneuf-du-Pape Cuvee Vieilles Vignes is made from 65% Grenache, 20% Mourvèdre, 10% Syrah, 5% divers.

In contrast to Chaupin, which is made from old-vine Grenache on sandy soils, the cuvée Vieilles Vignes is from old vines of Grenache, Mourvedre, Syrah along with smaller percentages of other permitted varieties that are grown in these old vineyards. The wine is sourced from 4 terroirs: pebbly clay, sand, gravelly red clay and sandy limestone. Vieilles Vignes is always the most powerful and concentrated Châteauneuf-du-Pape cuvée made at Domaine de la Janasse.

Review:

The 2020 Châteauneuf Du Pape Vieilles Vignes also saw some stems (the estate started keeping some stems with the 2016 vintage) and was 75% destemmed, with the blend being 70% Grenache, 20% Mourvèdre, and the rest Syrah, Cinsault, and Terret Noir. As usual, it’s a more powerful, black-fruited wine comparted to the Cuvée Chaupin and has lots of crème de cassis, liquid violet, crushed stone, woodsmoke, and peppery herbs. It displays the vintage’s purity and freshness yet brings the concentration as well as the structure. I’ll be shocked if it’s not in the handful of top wines in the vintage.

Domaine Meo-Camuzet Corton Les Perrieres Grand Cru 2020


Your first impression of Les Perrieres is that of a typical Corton, as it is so frequently described: austere, slow to mature, tannic. But that impression should be moderated because the wine is apparently multifaceted: frankness, certainly, but also an underlying structure that lines the palate and a finish marked by minerality. There's no heaviness, which facilitates the expression of this complexity. A long ageing period is certainly beneficial.

Review:

One of the highlights of the range this year is the 2020 Corton Grand Cru Les Perrières, a vibrant, mineral wine evocative of wild berries, forest floor, rich spices and rose petals. Medium to full-bodied, concentrated and vibrant, with beautifully refined tannins and a long, penetrating finish, it's well worth seeking out.
