Seven has been brewed by making use of soft ground water from Echigo Yuzawa, which is the utmost characteristics of Shirataki. This sake features fruity and elegant aromas of peach, coconut and orange complimented by floral, ginger, cucumber and almond. On the palate, generouse and rich flavors of honeydew, almond and toasted rice, with balanced acidity and smooth aftertaste.

SEVEN - The name "SEVEN" reflects the intention of brewing new sake in a new era with two seventh generations.

The current head of Shirataki Sake Brewery, Shintaro Takahashi, represents the seventh generation.

The general manager of a sake brewing is called a toji. In 2018, Takaki Matsumoto was appointed as the seventh generation brewer at Shirataki Sake Brewery. He was 27 back then - a young new toji who will open up a new chapter for Shirataki Sake Brewery.
Seven is the first brand that Mr Matsumoto planned from scratch as a chief brewer.

The finest sake rice is luxuriously polished to a rice polishing ratio of 25%, and carefully brewed in small tanks during the coldest months of January and February. The mash is pressed with a traditional press called "fune" and the mash is poured into bags. The bags are laid or hanged in a fune, then the fresh sake is squeezed out naturally. No dilution with water was done to enjoy a fresh and rich taste.

San Giorgio Ugolforte presents a dark core of red and black berry fruit layered with earth, leather, smoke, and herbs. Complex and elegant, the wine is full on the palate and firm in tannin structure. Refreshing acidity frames a graceful finish. Classic Brunello di Montalcino.

Harmonious, fresh and clean aromas of fresh apple, lemon, orange blossom, white flower. Pure, crisp, silky and fine texture. Ripe fruit flavors and good acidity.

The vines are 40-45 years old of age on average. All of the wines are 100% barrel fermented and 100% M-L fermentation

Excellent with poultry served with a creamy sauce. (The locals enjoy it with Poulet de Bresse / Bresse Chicken).

First vinified in 2002, Shaw + Smith Shiraz has quickly garnered attention a standout cool climate Austrlian shiraz.

Sourcing immaculate fruit from the cool Adelaide Hills region, Shaw + Smith carry out whole berry fermentation in open-topped steel vats allowing for gentle yet thorough extraction and optimal aromatics.  Maturation in French oak allows tannins to soften and aromas to harmonize before bottling under screw cap.

Shaw + Smith own two vineyards in the Adelaide Hills, at Balhannah and Lenswood, totalling 55 hectares. The vineyards are planted to varieties that perform particularly well in the region, namely Sauvignon Blanc, Chardonnay, Pinot Noir, and Shiraz.

Hand picked, sorted and fermented as a combination of whole berries and whole bunches in open fermenters, with gentle plunging and minimal working. Aged in French oak for fourteen months, of which one third was new.

Shaw + Smith Shiraz is a medium bodied cool-climate Shiraz, in which balance is more important than power.

Siegel Gran Reserva Carmenere is made from 100% Carmenere.

The grapes for the Gran Reserva wines are the product of a careful selection of Siegel's best vineyards in the Colchagua Valley, harvested by hand, and revealing a strong expression of the land.

Siegel San Elias Carmenere is made from 100 percent Carmenere.

The nose shows beautiful red and dark fruit aromas, earthy notes and violets with balanced acidity. Supple and round in the mouth, juicy tannins, good concentration.

The wine pairs well with full flavored cheeses and lamb.

Siegel Special Reserve Carmenere is made from 100 percent Carmenere.

Viña Siegel is a family operated winery with a well-established tradition and long history. For generations we have been dedicated to the art of crafting wines with strong identities. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Carmenere has been aged for 12 months in French oak barrels. It has an intense violet-red color, with aromas of black fruits, spices, dark chocolate and dried figs. The palate is balanced and juicy with velvety tannins and a long finish.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C for a deeper colour and better structure. Smooth pump overs happen once a day at the winemaker’s discretion. Post-fermentative maceration for 2 weeks. Then the wine is separated from its lees and malolactic fermentation ensues. Once the wine has fermented it is smoothly clarified and cold stabilisation occurs when necessary.

It pairs well with spicy foods, pasta with mushrooms and roasts

Silverado Vineyards Geo Cabernet Sauvignon is made from 100% Napa Cabernet Sauvignon.

In 1988, Ron and Diane Miller, purchased the Mt George Vineyard, the site of the first vinifera plantings in the Coombsville AVA. Situated in a quiet corner of the Napa Valley a few miles east of the city of Napa, Mt George is a vineyard of undeniable strength. As the 20th anniversary of Silverado’s first Mt George harvest approached in 2012, the decision was made to make a wine for the occasion. It is called GEO – Greek for “Earth” and short for “George” – and it represents the highest expression of single-vineyard Cabernet from this extraordinary place.

Aromas of black cherry liquor, crushed hazelnut, tilled earth, and dried rose petal. Decadent and rich on the palate with flavors of sweet dark plum and cocoa powder. Well-integrated tannins lead to a seamless finish.

Pair GEO with Chicken with Chunky Olive Tapenade

Black, inky earthiness defines the nose and palate, along with a round, silky mouthfeel. Cocoa and dried violets appear against a slightly dusty backdrop, while notes of leather, black olive, and slate are soul-stirring. This is, as usual, a beauty, perhaps more so thanks to a great vintage. It is classically Napa Valley, and classically “house styled” by Aron Weinkauf, with black and blue fruit, supple, approachable tannin structure and great depth of aroma and flavor. That said, keep in mind that this isn’t the winery flagship offering. Even in this price range Lyndenhurst is always a solid value, and is so again – maybe even a little more than usual. Decant well if you crack into this in the near term, or age it for the long term. Contains 10.6% Merlot, 3.8% Petit Verdot, 3.5% Cabernet Franc and 2.9% Malbec. (Rich Cook)

Tanzanite Brut Rose Method Cap Classique is made from 60% Pinot Noir and 40% Chardonnay.

It begins with a sumptuous and luminous pink appearance. Followed by a delicacy of red fruit aromas. The nose is generous and elegant. Fresh attack followed by a harmonious sensation on the palate. Perfectly balanced in the best Tanzanite Style which combines elegance and flair.

Yearly the grapes are sourced from Robertson. Hand picking of the grapes we do in small 18kg lots and then whole bunch pressing on every 5 Ton of grapes. Yields are around 450-480 liters per ton of grapes. Juice was inoculated with Prise de Mousse yeast for primary fermentation at cool temperatures for 8-10 days. This is followed by Malolactic fermentation on all base wines. The MLF ads depth and complexity to the base wines. With maturation the wine will get soft, creamy and elegant. Secondary fermentation took place in the bottle and wines were left on the lees and tasted every few months to monitor the ageing on the lees. Minimum time spent on the lees 24 months.

It’s the only area in the Western Cape where you will find Chalk in our soil.
The wine is made from selected vineyards. Limited to 6 000 bottles annually.
Age of the vines is around 10-15 years old.

Pairs well with roasted white meat, game, tapas, ham and smoked salmon.

"Pale pink. Ripe red berries accented by Cointreau show on the nose of this very dry and crisply textured sparkling rosé. It’s mineral and subtly fruit flavored palate is superbly fresh and alluring despite an astringent touch on the finish. It’s a great sparkler for food. A 60/40 blend of Pinot Noir and Chardonnay from 10-15 year old vines in the Robertson area."
