The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. Orin Swift 8 Years In The Desert Napa Valley is a blend of Zinfandel, Petite Sirah, Syrah.

The Eight Years in the Desert pours a dark mauve core with a red amethyst rim and aromatic notes of ripe blackberry and raspberry bramble. Further hints of chocolate covered espresso bean, black pepper and allspice emanate from the glass. The entry is dominated by black plum preserves and freshly baked mixed berry morning bun with an energetic yet concentrated mid-palate. Soft and textured tannins give way to a lifted finish with a touch of pluot and dried tarragon.

Orin Swift Abstract Red is made from  Grenache, Petite Sirah and Syrah.

The 2022 Abstract pours a dark purple core with a neon, ruby rim. The nose is quintessential Abstract but with a broodier twist-notes of ripe black plum, cacao, black pepper, cedar, dried porcini, forest floor musk and sweet oak. The entry is coating and flooding with hints of blueberry preserves, tarragon, balsamic glaze and anise. Bright and lifting through the palate, the finish offers an umami note akin to eggplant yakitori.

Ossian Quintaluna Verdejo is made from 100% Verdejo

Quintaluna is a young wine that is made exclusively from Verdejo in the province of Segovia. 60% is very old grape: pre-phylloxera (ungrafted). 40% is made of very young grapes on trellises, grown certified organic, with low yields. The key to success for the Verdejo grape is held in the soil. Ideal soil has a high content of sand and pebbles of different sizes. Some have higher proportions of clay and others have significant proportions of clay and limestone. As the pebbles and sand allow for good drainage, the clay holds enough moisture to allow the vines to thrive.

The color is a straw yellow with greenish reflections. On the nose, you will find aromas of white flowers, stone fruit (peach), and citrus (lemon, mandarin). It also displays tropical fruit aromas. The palate is complex. Natural acidity is evident in the freshness and length on the palate. Almond and ripe fruit flavors are found in the mid-palate with fresh grass and citrus on the finish.

It pairs wells with all kinds of appetizers, entrees and salads.

FOOD: Sea or lake fish to bring out its outstanding features; goes well with white meat and soup, and has quite a surprising affinity with tasty cheese

The nose leads with a bright pop of red fruit, including cherry and raspberry, followed by hints of cola and baking spices and a light herbal note. Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.

The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

Pago de Carraovejas Cuesta de las Liebres 2019 is a red wine that masterfully blends finesse with a robust flavor profile. In the mouth, the wine has a smooth texture but fills the palate with balanced flavours, including fine tannins, which help extend the life of the wine. The finish and aftertaste are both long and elegant.

During the barrelling period, which lasts 30 days, the wine is crushed and pumped over daily, all the while controlling the density, temperature and evolution of the yeast. At the end of this fermentation, the tanks are emptied and the wine taken for malolactic fermentation.

The malolactic fermentation begins without the addition of bacteria. The temperature is held steady at 20ºC for period of 22 days, during which we monitor the levels of malic and lactic acids. When the malic acid content is less than 0.1 grams per litre, the wine is decanted to separate the lees and is transferred directly to the barrels without undergoing any type of filtration, clarification or cold treatment.

The wine is aged for twelve months in new and semi-new French oak barrels (no more than three years old). At the end of this period, it is taken to the tank for homogenisation, where it undergoes light filtration through cartridges (open pore) and is then bottled.
