Mordoree Tavel Rose Reine des Bois is made from Grenache of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette .

Nose: Steady rose, brilliant and cristal clear.
Aromas : very complex : from flowers, white fruits and red fruits (strawberries, pomegranate, rapsberry). Slightly mentho-lated
Palate : fresh, classy, elegant, very long.

This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.

"A blend of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette, the 2022 Tavel La Reine des Bois is a touch darker in hue than its stablemate, the La Dame Rousse, but it's still not among the darkest of Tavels in the glass. That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense.  Nickel & Nickel DeCarle Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Polished and approachable, the 2018 vintage offers an alluring floral-berry perfume and pops of dark, wild berry and clove flavors. Precisely focused wine that is colorful and sound. Beautiful length, too. Already so drinkable now but will age gracefully, especially for Atlas Peak. Try after 2027.

Niner Wine Estates Chardonnay is made from 100% Chardonnay.

Niner fermented the juice in a combination of barrels and stainless steel tanks. We then aged the finished wine in 33% new French Oak barrels for 10 months. A portion of the barrels went through malolactic fermentation to maintain a balance of creamy and bright acidity. Monthly lees stirring developed a lush mouthfeel. The result is a Chardonnay with expressive apple/pear aromatics and a beautifully balanced palate.

Pineapple and peach aromas are bold yet restrained enough on the nose of this bottling, which also offers honeysuckle and gardenia elements. White peach, marshmallow and pineapple ice cream flavors converge on the palate, which is chalky in texture and finishes on a blast of citrus.

The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. Extremely perfumed and floral with lavender, lilacs and violets to the sweet, ripe berries, such as blackberries and blackcurrants. Some slate and graphite, too. It’s full-bodied, yet ever so balanced and refined, with super fine tannins that last for minutes. Fresh herbs, such as bay leaf and lemon grass highlight the dark fruit. The quality of tannin is exquisite with wonderful polish and refinement. Lasts for minutes. So wonderful to taste now, but better after 2026.

Ormes de Pez Saint Estephe  is made from 54% Merlot, 38% Cabernet Sauvignon, 4% Cabernet Franc and 4% Petit Verdot.

Château Ormes de Pez 2020 displays deep garnet-purple color with notes of plum preserves and dark berries, plus hints of graphite. Nice chewiness to the texture and lovely freshness, finishing on a lingering fragrant-earth note.

"The 2020 Capitel is pure Verdejo from the oldest vines from the Peña Aguda vineyard in the village of Nieva on slate soils. This is the last vineyard to be bottled and has higher alcohol (14%) than the rest of the vineyards despite now harvesting earlier. The wine has a different aromatic profile but getting closer to the style of Ossian, less opulent than in the past, with more energy, quite fruit-driven with some exotic notes reminiscent of banana skin. Quintaluna is a young wine that is made exclusively from Verdejo in the province of Segovia. 60% is very old grape: pre-phylloxera (ungrafted). 40% is made of very young grapes on trellises, grown certified organic, with low yields. The key to success for the Verdejo grape is held in the soil. Ideal soil has a high content of sand and pebbles of different sizes. Some have higher proportions of clay and others have significant proportions of clay and limestone. As the pebbles and sand allow for good drainage, the clay holds enough moisture to allow the vines to thrive.

The color is a straw yellow with greenish reflections. On the nose, you will find aromas of white flowers, stone fruit (peach), and citrus (lemon, mandarin). It also displays tropical fruit aromas. The palate is complex. Natural acidity is evident in the freshness and length on the palate. Almond and ripe fruit flavors are found in the mid-palate with fresh grass and citrus on the finish.

It pairs wells with all kinds of appetizers, entrees and salads.
