Mordoree Tavel Rose Reine des Bois is made from Grenache
Nose: Steady rose, brilliant and cristal clear.
Aromas : very complex : from flowers, white fruits and red fruits (strawberries, pomegranate, rapsberry). Slightly mentho-lated
Palate : fresh, classy, elegant, very long.
Aging capacity : 8 to 10 years.
This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.
To pair with: roasted and or spicy chicken, duck, goose, fish soup, white meat, seafood and a lot of fishes (tuna, John Dorry, red mulet, etc...).Quite all Asian cuisine. Dishes with garlic, dishes with tomatoes.

"A blend of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette, the 2022 Tavel La Reine des Bois is a touch darker in hue than its stablemate, the La Dame Rousse, but it's still not among the darkest of Tavels in the glass. That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. Full-bodied and full-flavored, it's one of the candidates for top Tavel this year. - Joe Czerwinski"

The Fournier Family cider story started in 1943. Located in South Normandy in the middle of Dukes of Alençon province, the landscape is offering a mix between green valley and strong hills. Apples and pear trees are growing up on the hills. It is in this typical and original environment that Fournier Cider is cultivating their orchard. The fruit variety selected is giving character, authenticity and quality. The Cidre Fournier Spirit is having under control quality in their growth over: love of the land, the orchards, qualitative fruits and product well made.

Mt Monster Cabernet Sauvignon is 100 percent Cabernet
Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.
Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.

Deep purple in color. Ripe cassis and black plum fruits on the nose with violets. Varietal fruit-driven palate, with cassis and dark berryfruit and spice flavors. Soft tannins compliment the fruit with mouth-filling generous finish.

Showcasing spectacular concentration and complexity, this wine offers remarkable depth and richness, with aromas of sun-drenched blackberry, briarberry, espresso, dark chocolate, cedar, and graphite. On the palate, the wine is framed by firm, mouth-filling tannins, and excellent structure that underscore opulent flavors of dark berry and spice.
Sitting just above the fog line, sheltered from the valley breezes, this distinct vineyard retains the heat from the early morning sun throughout the day and the additional warmth, paired with the vineyard’s shallow iron-rich soils, combine to create a distinctive flavor profile that is concentrated, complex and classically structured.

Outstanding balance and complexity from the beginning that showcases concentrated black fruits and purple flowers with plenty of spices and subtle yet harmonious toast and cedar aromas. Intense graphite and stony minerality, too. Full- to medium-bodied on the mid-palate with delightful acidity that gives this wonderful crunchiness. Fine-grained juicy tannins. Precisely focused wine that is colorful and sound. Beautiful length, too. Already so drinkable now but will age gracefully, especially for Atlas Peak. Try after 2027.

All older vintage wines have been purchased from a single collectors cellar. Pictures can be requested before shipment.
In 2007, production was just less than 5000 kg per hectare. This wine is prepared with Tempranillo 100% grapes from our vineyards.
The grapes are initially subjected to a six-day pre-fermentation cold maceration below 14ºC. They then undergo 30 days of alcoholic fermentation at a controlled temperature of 28ºC, after which the wine is removed from the tanks without pressing the grape skins. The malolactic fermentation is slow and relaxed at a temperature of 20 ºC for 28 days without the addition of bacteria.
The wine is aged for18 months in new French oak barrels and is decanted into new barrels every six months. At the end of this period, the wine is blended and bottled without undergoing any type of filtration, clarification or cold treatment.
Prepared with Tempranillo grapes (100%), this wine has a ruby red colour with very pure, intense garnet tones.
Its bouquet has fine complexity with tones of ripened fruit, especially cherries, blue berries and black currants, which are in harmony with tones of good wood, spices (vanilla and coconut) and a liquorice undertone.
In the mouth, this wine displays great balance, proving pleasing to the taste, sweet due to the maturity of its tannins and exuberant on account of its pleasant level of acidity.

The 2019 Ribera del Duero Reserva is also terrific, with gorgeous aromatics of black and blue fruits supported by Asian spices, lead pencils, cedarwood, and violets. It's beautifully textured, medium to full-bodied, has a concentrated, powerful mouthfeel, and ripe, integrated tannins.

Grape varieties: Parellada 40%, Macabeo 30% and Xarel·lo 30%.
Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

At the foot of Spring Mountain, the vineyard produces soil and mineral-driven cabernet sauvignon with aromas of ripe blackcurrant and damp earth. A dense palate of blackberry and cassis flavors harmonize with intense mineral expressions bolstered by soft, lush tannins.
Review:
Superb aromas of blackberries, currants, crushed stones, conifer and wet earth. Menthol, too. Full-bodied with a dense center-palate, yet it remains agile and persistent. Lovely character and richness at the finish, but not overpowering. Another three or four years will make it better, but already gorgeous.

Paul Hobbs Coombsville Cabernet Sauvignon is made from 100% Cabernet Sauvignon
Since our inaugural release last year, this wine has quickly become one of the most compelling in their portfolio. Offering a gorgeous deep purple hue, our 2019 captivates with a bouquet of crushed blueberry, summer savory spice, and a delicate tobacco leaf note. The palate is remarkably balanced with well-integrated
tannins and fresh acidity that wraps around boysenberry and black fig along subtle notes of rosemary and a crush rock minerality, which lends tension through the long finish.

This latest release from the exceptional 2018 vintage presents a deep purple rim surrounding an opaque garnet core with an abundance of aromas emerging from bakers’ chocolate and dark cherry to crème de cassis to tapenade. Both graceful and bold on the palate, the broad tannins are balanced by pulsing acidity that brings tension and freshness throughout. Notes of boysenberry are interspersed with accents of sweet thyme against a backdrop of crush rock minerality, adding to the long finish and layers of complexity.
Philippe Milan Bourgogne Rouge Cote Chalonnaise is made from 100 percent Pinot Noir.
Light color - translucent - but loads of flavors. Long finish, quite exceptionnal for a Bourgogne Rouge. Very aromatic, with perfume aromas and cherry flavors.
Pierre Olivier Brut Vin Mousseux NV is made from 100% Airen.
A value sparkling brut, made with Airen grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.
The color is a brilliant straw yellow with a fresh fruit perfumes, especially apple and pear, and floral notes such as elder and bloom. The taste is very fresh and light, with a very interesting acidity. There is an important presence of mineral salts due to the volcanic origin of the soil.

Proidl Riesling Alte Reben Kremstal DAC is made from 100 percent Riesling
Pale yellow-green, silver glints. Fine herbal savouriness, white peach, mineral nuances, followed by hints of lime, but still rather restrained. Complex, taut, green apple, fresh acidity, citrus-mineral reverberations, and exhibiting length. Definite ageing potential. .

This is amazing on the nose with dried strawberries, sandalwood, mahogany and tea leaf. Iron and rust underneath the fruit. Dried flowers, nutmeg and rose petals. Full-bodied yet agile and energetic with layers of fine dusty tannins. Entrancing finish. Give this four or five years in the bottle, but it’s hard not to drink.
