Michel Thomas Sancerre Blanc Silex 2021

Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.

Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.

The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. This wine come from the hardest stone soil on the vineyard giving it pleasant notes of fruit and a very dry flavor: This wine is bottled using traditional methods without filtration, allowing for a authentic and natural taste to the wine.

A delicious apéritif and the classic match for goat cheese or asparagus.



Michel Thomas Sancerre Rose 2022

Thomas Sancerre Rose is made from 100% Pinot Noir.

Vines are 20-55 years old.
Terroir (soil type) is a blend of "Caillottes" and "Terre Blanche".
Everything is machine harvested (which means it is 100% destemmed).
50% Direct press + 50% Saignée (bled) with 12-24 hours of skin contact maceration.
The alcoholic fermentation is done in temperature controlled stainless steel tanks.
Right before bottling, the wine is fined with Bentonite (very light filtration with oenologic clay).

Tasting Notes:
Light, bright pink. Redcurrant, strawberry and chalk on the nose, with a touch of singed orange gaining strength with air. Dusty red fruit and citrus flavors are braced by tangy minerality, which adds lift and cut. Uncompromising in the best way, finishing with excellent clarity and echoes of lemon and orange zest.

Food pairings:
This is a very versatile wine. You can have it on its own in the summer time as an apéritif. But it is also excellent with Hors d'Oeuvres and terrines. It will compliment any white meat dish and poultry. You can also enjoy it with salmon or exotic food (slightly spicy sushi).

Michelet Petit Chablis 2022

Michelet Petit Chablis is made from 100 percent Chardonnay.

Golden color. White flowers, fresh, lime and citrus aromas. Pleasant mouthfeel, supple, crisp, fruity flavors.

Machine harvested at full maturity (around Sep. 25th - lasts 12-18 days); pneumatic press; fermentation in temperature controlled stainless steel tanks for 8-10 days; M.L (2 months after the harvest); aging on the lees until February; racking; fining if necessary; cold stabilization; filtration right before bottling in April.

Ideal as an aperitif, the wine is an excellent companion to seafood.

Deep inky black & purple in colour. The nose is perfumed with violet, blackberry, vanilla and spice with a touch of earth and liquorice over white pepper in the background. Expansive palate, smooth lush ripe back fruits nicely balanced oak, plenty of concentration with a long finish.

Oak maturation takes place using 35% new barrels both French and American. This blend was put together using select barrels from our family estate that best demonstrate the intensity of our fruit balanced by integrated oak.

"This is what Padthaway Shiraz is all about with powerful, sweet flavours nicely tempered by some more savoury nuances – Shiraz with a kicker. Quite deeply coloured, it opens up with an array of red and black fruit pastille aromas topped by bay leaf and black pepper backed up by a decent dose of oak – French and American, adding vanilla bean and toasted coconut. It’s then quite chunky on the palate, delivering plenty in both the flavour and complexity department. The fruit is fleshy and generous while reasonable tannins are well integrated and provide a solid backbone to fruit and oak. It’s a bit old fashioned in the oak department you might say but fans of oaky reds will lap it up in the blink of an eye."

Mordoree Chateauneuf du Pape Rouge Dame Voyageuse is made from Grenache 90 % Mourvèdre 4% Syrah 4 % Counoise 1% Vaccarese 1% .

Mordoree Chateauneuf du Pape Rouge Dame Voyageuse is a more approachable version of the La Reine des Bois. It is meant to be enjoyable early compared to her sister Cuvée which is made for the long run.

Aromas : red fruits, changing to touches of leather, black truffles and coffee.
Palate : fat, concentrated and full flavored with a very long liquoriced and fruity finish.

"Moving to the 2019s from bottle, the Grenache-heavy 2019 Châteauneuf Du Pape La Dame Voyageuse offers a beautiful array of both red and black fruits as well as classic Provençal notes of lavender, peppery garrigue, and flowers. Rich, medium to full-bodied, and beautifully textured on the palate, this is another terrific vintage for this cuvée, which remains an incredible value in the market today. It will drink nicely for 10-12 years if stored correctly."

Mordoree Chateauneuf-du-Pape La Reine des Bois is made from 80% Grenache, 10% Mourvèdre, 5% Syrah, 2.5% Vaccarese, 2.5% Counoise.
Aged in 50% oak barrels.
Deep ruby red color, red fruits aromas leading to leather, black truffles and coffee notes. Fat and concentrated on the palate, with liquorice and dark fruit flavors.
Pairs well with game and red meats, cheeses.

"The flagship is the 2018 Châteauneuf Du Pape La Reine Des Bois and it’s 80% Grenache, 10% Mourvèdre, 5% Syrah, and the rest a mix of permitted varieties. Aged 20% in old barrels (this was raised in new barrels in the past) and the rest in stainless steel, it’s more backward and closed compared to the Voyageuse release and has ample blackcurrants, smoked earth, graphite, and peppery garrigue aromas and flavors. Medium to full-bodied, balanced, and textured on the palate, it has solid underlying structure yet still plays in the balanced, charming, elegant style of the vintage. It’s beautifully done and certainly up with the top wines. It should drink nicely for 10-15 years."

 Mordoree Cotes du Rhone Dame Rousse Rose is made from 40% Grenache, 35% Syrah, 15% Cinsault, 5% Carignan, 5% Mourvèdre


Color : rosé, slightly orange (mordorée colour).


Aromas : crystallized oranges and cherries, slightly aniseed.


Palate : very rounded, fresh and long finish.

Review:

This estate makes brilliant rosé, and the 2021 Côtes Du Rhône Rosé might be the best I've tasted from the vintage. Ripe raspberries, white flowers, and beautiful minerality define the aromatics, and it's medium-bodied on the palate, with a fresh, elegant, almost crystalline-like texture that keeps you coming back to the glass. Seemingly in between a Provencal rosé and a Tavel, it's going to be incredibly versatile on the dinner table. Don't miss it.

A blend of Grenache, Syrah, and Mourvèdre brought up in tank, the 2019 Côtes Du Rhône La Dame Rousse is a big, rich, powerful Côtes du Rhône loaded with notions of smoked black cherries, licorice, scorched earth, and ample minerality. These all carry to a medium to full-bodied Southern Rhône that has terrific purity of fruit, ripe, present tannins, and a great finish. I love its balance and it’s going to deliver ample pleasure over the coming 4-6 years.

Morin Fournier Cidre de Normandie Brut NV

The Fournier Family cider story started in 1943. Located in South Normandy in the middle of Dukes of Alençon province, the landscape is offering a mix between green valley and strong hills. Apples and pear trees are growing up on the hills. It is in this typical and original environment that Fournier Cider is cultivating their orchard. The fruit variety selected is giving character, authenticity and quality. The Cidre Fournier Spirit is having under control quality in their growth over: love of the land, the orchards, qualitative fruits and product well made.

perfect with savory dishes like meat and buckwheat pancake. It can be mixed with fruit liquor for cocktail.

Murray Cabernet Sauvignon Red Mountain 2020

Murray Cabernet Sauvignon Red Mountain is made from 78% Cabernet Sauvignon, 10%, Merlot , 6% Malbec, 6%, Petit Verdot.

A beautiful ruby color, this wine is very fruity with lots of plum and just a hint of characteristic Red Mountain minerality. It is very smooth with a slight texture of tannin on the back. This wine is a real Cab crowd pleaser.
As much as possible, winemakers Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. They let the powerful and concentrated fruit from Red Mountain speak for itself. The result is a collection of well-balanced, nuanced wines that reveal something new and interesting each time you open a bottle.

They age in the oak barrels until they are ready to bottle.Neutral Oak 52%, New Oak 48% (American 57%, Hungarian 15%, French 14%, European 14%).
After primary fermentation, all wines are pressed directly into 59 gallon oak barrels. Aging for 19 months.

Octopoda Cabernet Sauvignon Napa Valley 2022

This 100% Cabernet Sauvignon offers an incredible aroma of big black, rich fruit, spring flowers, graphite and toast.  Full-bodied with stunning concentration and flavors of dark cherries, black plum, melted milk chocolate.  Well integrated French oak, this well balanced wine has supple, but ripe tannins and a lengthy finish.  From a single vineyard in Oakville.  14 months in 60% new French oak, Excellent value for Oakville-Napa Valley.  Just 350 cases produced. 

Ornato Prosecco NV

Ornato Prosecco is made from 100 percent Glera.

Typical crisp and delicate perlage. Pale yellow color. Delicate and fragrant bouquet, with fruity notes of banana and apple and notes of acacia flowers. Fresh and light on the palate with balanced acidity and body harmony with a pleasant dry aftertaste.

Grapes are accurately selected both for area of origin and quality. The soft pressed must is stored in steel tanks for the static cold decanting. The fermentation with selected yeasts is made at a controlled constant temperature and is completed in 8-10 days. The wine is then filtered in steel tanks with the addition of saccharose and selected yeasts for the second fermentation (Martinotti Charmot Method).

Ideal as an aperitif, it is a perfect combination to hors d’oeuvres and delicate first courses.

Ornato Rosso 2019

Ornato Rosso is made from 60% Merlot, 35% Corvina, 5% Negroamaro.

Intense purple color, tending towards amber with ageing. The oak aging gives pleasant notes of spices and vanilla. This wine has a very solid structure due to the elevated alcohol and the balance between soft tannins and acidity.

Traditional red wine vinification at a controlled temperature. The harvest is carried out in two different times. After the hand-harvest, grapes are pressed, and fermentation starts. The skins are left in the must for a long period to extract flavors and the characteristic ruby red color. Aged in oak for 3 to 4 months

Great wine for roasted and grilled meats. Ideal with game dishes and excellent with mature hard cheeses

Ottella Lugana Bianco 2023 (half -bottle)

Produced in South Benedetto di Lugana. 100% Turbiano (clonal type of Trebbiano di Lugana)

The grapes are harvested exclusively from our own vineyards; harvesting is strictly manual in small 17kg-crates. Guyot, double arc training method.


A brief contact on the skin, stainless steel-controlled fermenting.


Intense straw yellow color with green tinges. Exotic notes, candied fruit and citrus, warm and very deep on the nose. Widespread expressive finesse; to the palate the texture is rich and persistant. Pairs best with fish-based plates, soup, pasta or rice, white meat.

Ottella Lugana DOC Le Creete 2023 (half-bottle)

Ottella Lugana DOC Le Creete is made from 100% Turbiano (clonal type of Trebbiano di Lugana)

PRODUCTION AREA: S. Benedetto di Lugana. The grapes are harvested exclusively from our own vineyards; harvesting is strictly manual in small 17kg-crates
TRAINING METHOD: Guyot, double arc
Golden, warm, intense straw yellow. Immediate exotic notes. It develops in a very pleasant fashion, good mineral impression  Rich, succulent and well balanced for a truly satisfactory mouthfeel. Mineral on the finish with just enough acidity to provide lift and depth. 
FOOD: Sea or lake fish to bring out its outstanding features; goes well with white meat and soup, and has quite a surprising affinity with tasty cheese
ALCOHOL BY VOLUME: 13% vol
SERVING TEMPERATURE: 10-12 degrees Celcius





   

Pago de los Capellanes Crianza 2021


Crianza is the essential wine. Balance and integrity. It displays the fine manners of experience and the grace of plethoric vine. Juicy black fruit on the palate inviting you to eat well and feel good.

But there is more. Crianza maintains an invisible pact with the landscape. An imperceptible force that brings us closer to the truth of the place. And instantly turns extreme climate vineyards into the most welcoming place in the world.


Prepared with Tempranillo grapes (100%), this wine has a very bright, intense maraschino cherry colour that fades to a Cardinal red rim.

It has a very marked aroma with a good balance of fruit and wood, where tones of vanilla intermingle with well-ripened fruit, black berries and wild fruits. There are also noticeable hints of leather and liquorice, resulting from the mingling of the French oak and the aromas inherent in this variety of grape. 

In the mouth, the wine has a smooth texture but fills the palate with balanced flavours, including fine tannins, which help extend the life of the wine. The finish and aftertaste are both long and elegant.

Vineyard: 

Pago de los Capellanes, Pedrosa de Duero. 

Variety composition: 

100% Tempranillo.

Type of soil: 

Clayey and chalky. 

Aging: 

12 months in barrel and remainder on rack.

Type of oak: 

100% French oak, medium toast.

Serving: 

Uncork and decant one hour before serving at a temperature of 16-18 ºC.

Selected harvest with yields limited to 5000 kg per hectare. The harvest begins in early October, starting with the most mature parcels. Once the grapes are brought into the winery, the tanks are seeded with indigenous yeast (start culture) and the alcoholic fermentation begins. During the barrelling period, which lasts 30 days, the wine is crushed and pumped over daily, all the while controlling the density, temperature and evolution of the yeast. At the end of this fermentation, the tanks are emptied and the wine taken for malolactic fermentation.

The malolactic fermentation begins without the addition of bacteria. The temperature is held steady at 20ºC for period of 22 days, during which we monitor the levels of malic and lactic acids. When the malic acid content is less than 0.1 grams per litre, the wine is decanted to separate the lees and is transferred directly to the barrels without undergoing any type of filtration, clarification or cold treatment.

The wine is aged for twelve months in new and semi-new French oak barrels (no more than three years old). At the end of this period, it is taken to the tank for homogenisation, where it undergoes light filtration through cartridges (open pore) and is then bottled.

 

Pago de los Capellanes El Noga 2019



This is a single vineyard, from the parcel "El Nogal" located in the town of Mambrilla de Castrejon grown at 850 meters above sea level. (2750 feet).

A hillside of tinto fino vines red in the village of Mambrilla, a short distance from the winery. Uninterrupted views of the Duero, the wind stirring the airy branches of the large walnut tree that guards the vineyard. A place with a special gift. Its sandy, stony soils, a feeling of harmony and a special microclimate: everything seems to enhance the talent of its surroundings.

We have been vinifying the evocative grapes of this plot for the past few years to produce an endlessly charming wine. Overwhelming, powerful and exquisite. With a vitalising force.
