rowing in the gravelly soil of an ancient riverbed in the beautiful Alexander Valley, the old vines benefit from hot afternoons and cool, foggy mornings, favorable for the development of Botrytis (Noble Rot). Extremely small yields in the Sémillon, Sauvignon Blanc and Muscat vineyards lead to the immensely concentrated fruit. Just as one receives a note from one’s sweetheart, we present this wine as a precious ‘Love Note’ or ‘Billet Doux.’
Deep crystal clear gold. Intense and complex bouquet of dry apricot, pêche de vigne and Reine Claude yellow plum intermixed with notes of quince, honey, Muscat and a hint of sweet vanilla. Full bodied, the palate is reminiscent of the nose, with a creamy sweet texture and a great intensity. The large amount of sugar and glycerin creates a highlighted viscosity. The 2018 Syrah Bouquet Garni comes from the cool climate, higher elevation Bennett Valley in Sonoma and offers a big, exotic nose of blackberry and blackcurrant fruits as well sandalwood, dried flowers, new leather, and white pepper. The fruit is ripe and opulent, yet it still holds onto loads of classic cooler-climate Syrah gaminess and peppery notes. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

Beginning in 1993 and following in the tradition of great Bordeaux estates, Opus One created a fine second wine called Overture. Every acre of the estate vineyard is meticulously farmed with the attention to detail and singular focus required to produce Opus One. This scrutiny carries through the blending process and certain lots will not be included in the final Opus One blend. Yet, when these lots are afforded additional time in barrel along with the added flexibility of blending across multiple vintages, the final wine achieves a remarkable elegance and complexity.
Overture displays a vibrant garnet color with expressive aromas of fresh red fruit. Notes of bright cherry and red currant are underpinned by more earthy tones of ground cocoa, cedar and vanilla. Extended barrel aging gives the wine an elegant texture accentuated by round tannins and a soft mouthfeel.
Ormes de Pez Saint Estephe is made from 54% Merlot, 38% Cabernet Sauvignon, 4% Cabernet Franc and 4% Petit Verdot.

"The 2020 Capitel is pure Verdejo from the oldest vines from the Peña Aguda vineyard in the village of Nieva on slate soils. This is the last vineyard to be bottled and has higher alcohol (14%) than the rest of the vineyards despite now harvesting earlier. The wine has a different aromatic profile but getting closer to the style of Ossian, less opulent than in the past, with more energy, quite fruit-driven with some exotic notes reminiscent of banana skin. The wine is produced in the area of San Benedetto di Lugana in estate vineyards that are most suitable due to the high content of white clay.

FINING AND FERMENTATION • Delicate, soft pressing of the whole bunch for most of the production, the rest with gentle destemming by oscillation. Thereafter, a strict protocol of vinification: partial malolactic fermentation, fining for 16 months on the yeast and fine lees, which mostly takes place in stainless steel tanks (80%) and the rest in wooden tonneaux and barriques.
Stimulating with marine or freshwater fish, it also goes well with savory or fatty meat (goose or pork). Enjoyable with seasoned, herbal cheeses of various types and elaborate dishes.

The malolactic fermentation begins without the addition of bacteria. The temperature is held steady at 20ºC for period of 22 days, during which we monitor the levels of malic and lactic acids. When the malic acid content is less than 0.1 grams per litre, the wine is decanted to separate the lees and is transferred directly to the barrels without undergoing any type of filtration, clarification or cold treatment.
The wine is aged for twelve months in new and semi-new French oak barrels (no more than three years old). At the end of this period, it is taken to the tank for homogenisation, where it undergoes light filtration through cartridges (open pore) and is then bottled.

Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

Mechanical and manual harvest. Fermentation takes place in stainless steel tanks at controlled temperature of 15-16º C for 18 to 20 days. Cold stabilization, filtration. Clay and limestone with small round stones.
Straw-like yellow color with fresh green tones.
Hugely aromatic, with tropical fruit, tangerine, lemongrass and lemon thyme. Fruity notes with anise and minerals, typical of the Verdejo grape. Full in the mouth, well structured, dense and persistent with a lingering aftertaste. The wine has great length and a delicious mouth-filling richness, and finished with a precise acid cut.
As a light aperitif, ideal at any time of the day, with a tapas or small snack, with Pasta al Pesto, Mousse of Tuna fish and lime..

Segries Tavel Rose is made from 50% Grenache, 30% Cinsault, 15% Clairette, 5% Syrah. The age of the vines is 30 years. Traditional vinification at low temperature, "vin de saignée" with a maceration during one night in cement vat.
This is large for a Rose...structured and focused, with the color of dark ruby. The nose is loaded up with fresh fruit. Strawberry, blackcurrant, and raspberry beam from the glass. On the palate, the mouth-feel is ripe and succulent. It has strength, but maintains its fresh and crisp expression. The finish is filled with Asian spice and slight hints of smoke. Drink this juice now or over the next year or two.
