Chateau de Saint Cosme Cotes du Rhone Hominis Fides Blanc 2021

At Saint Cosme, their white wine traditions are as important and time-honored as the reds. The Clairette grape variety has found the ideal place to express itself in the cool, limestone valley of Saint Cosme. Produced by massal selection from the Le Poste vinevard, the Clairette for Hominis Fides thrives in Miocene limestone sand. Its aromas of fennel and grapefruit usher in its finely textured palate, imparting it with substantial agability.

Chateau de Saint Cosme Gigondas is made from  70% Grenache, 15% Mourvèdre, 14% Syrah, 1% Cinsaut.

The wine shows intense blackberry and fig fruit with licorice, violets, and charcoal on the finish. It is remarkably fresh and finessed given the sun and warmth of the southern Rhône. The unique micro-climate combined with 60-year-old vines and traditional winemaking make Château de Saint Cosme Gigondas the benchmark wine of the appellation.

What a wide spectrum of aromas with everything from raspberry to candied orange, plus a slew of delicate spicy notes and fresh Mediterranean herbs. Chateau de Saint Cosme Gigondas Hominis Fides 2021


Hominis Fides is typically the most elegant of Château de Saint Cosme’s three single-vineyard Gigondas. “Grenache grown in the sandy soil produces marvelously textured wines as well as extremely refined tannins; a very special and stylish wine,” says Louis Barruol. The wine features aromas and flavors of pepper, truffle, graphite, and smoke.

Review:

Deep, vivid ruby-red. Intensely perfumed, mineral-tinged scents of medicinal cherry, redcurrant and cassis are complemented by suggestions of star anise, white pepper and pungent flowers. It offers densely packed bitter cherry, red berry liqueur, lavender and licorice flavors that open up very slowly with air. Extremely primary but highly promising, with a long, spice- and mineral-tinged finish shaped by youthfully firming tannins. Made with 100% whole clusters; raised in barriques, one-third of them new.

Chateau de Saint Cosme Gigondas le Poste 2021


Le Poste’s cool microclimate and limestone soil make it one of Saint Cosme’s most structured, aromatic, and mineral intense wines of the estate. This wine always walks a knife's edge of power and finesse thanks to its deep fruit and precise structure. The wine features aromas and flavors of iodine, violet, pepper, and ash.

Deep magenta. Expansive, spice- and mineral-tinged black raspberry, kirsch and boysenberry aromas are complicated by suggestions of incense, lavender and smoky minerals. Alluringly sweet and focused in the mouth, offering densely packed red and blue fruit preserve, floral pastille and exotic spice flavors that smoothly balance weight and finesse. This wine shows superb finishing clarity and mineral lift on the penetrating and impressively long finish, which features polished tannins and resonating fruit, floral and mineral notes.

Chateau de Saint Cosme Saint-Joseph 2021

Louis Barruol describes the microclimate of the vineyard Malleval as “very cold” which allows the grapes to retain acidity and showcase the floral aromas of the local Sérine variety. Aromas and flavors of blackberries and wild strawberries are accented by notes of peppercorns, tobacco, peonies, and violets.

Syrah, with its deep flavors and firm tannins, is a natural match for grilled or smoked meat and dishes featuring herbs, roasted mushrooms, and onions. Seared venison or beef with black pepper and thyme or a Moroccan tagine of pigeon or chicken are complimented by the spicy characteristic of Syrah. 

Review:

Stacks of dark forest berries plus notes of smoke, pepper and tar make this a very expressive St.-Joseph. Impressive depth and ripeness for the 2021 vintage on the front and mid-palates, then the stony minerality kicks in giving it more power at the sleek and structured finish. Drinkable now, but best from 2024.

Chateau Gravas Sauternes 2020

Gravas Sauternes is a blend of 100% Sémillon.
The wine shows a lovely pale golden color with deep golden highlights. Round and well-balanced offering complex aromas of candied fruits backed up by a hint of exotic fruit (mango, guava) and white flowers. On the palate, it is ample and fleshy, leading into a silky and long finish.   


The wine pairs well with white meats, scallops, exotic and spicy dishes, foie Gras, Roquefort blue cheese, chocolate desserts.

Chateau Hallet Sauternes 2020 (half-bottle)

Hallet Sauternes is made from 100% Sémillon.
With delicate aromas of honey, citrus, crystallized fruit and acacia, it makes a good match not only for desserts, but also for foie gras, roasted meats and blue cheeses.

It makes a delicious aperitif when served chilled.


Chateau La Graviere Les Terrasses Cotes de Bourg Rouge 2019

Graviere La Rouge Cuvee les Terrasses is made of 70% Merlot and 30% Cabernet Sauvignon

Deep red color with a narrow purple rim. Attractive aromas of ripe, juicy cherry and blackberry over spice, integrated toasted aromas. The palate is balanced and full-bodied with supple tannins, displaying rich cherry flavors combined with gentle toasting characters and a touch of spice. The finish is lasting with a bitter almond aftertaste.

Average age of the vines is 25 years. 
Manual harvest from September 21th to October 7th 2015.
Upon arrival at the winery, only the best grapes were selected using a sorting table.
Skin contact maceration during 2 weeks in temperature controlled vats. 
75% of the final wine was aged in stainless steel tanks with French oak staves and blended with 25% of wine aged in barrels.

Serve with red, white meats, poultry and fine cheeses.

 




Chateau Mazane Vacqueyras Rouge 2020

Chateau Mazane Vacqueyras Rouge is made from 60% Grenache, 25% Syrah, 15% Mourvedre.

Ages in 30% Aged in oak, 70% concrete vats.

Medium-bodied, pure and elegant. It offers plenty of plum, blueberry, spring flowers and peppery notes. Beautifully textured, enjoy it over the coming 6-7 years.

Pair with with duck (roasted or grilled) as well as any grilled vegetables (eggplant, zucchini).

Soil types
The vineyard stretches over the plateau of scrubland that is ideally located between the terraces of the Ouvèze (tributary of the Rhone) and Dentelles de Montmirail, and constitutes pebbles soil debris of Dentelles de Montmirail and clay.

Winemaking
Traditional winemaking, temperature controlled fermentation.

"The 2020 Vacqueyras Château Mazane is terrific and well worth seeking out. Based on 60% Grenache, 25% Syrah, and the rest Mourvèdre, this medium-bodied, supple, elegant Vacqueyras has lots of red and black fruits, complex notes of peppery garrigue, sandalwood, and spice, polished tannins, and a great finish. Drink this beauty over the coming 7-8 years or so."

Segries Tavel Rose is made from 50% Grenache, 30% Cinsault, 15% Clairette, 5% Syrah. The age of the vines is 30 years. Traditional vinification at low temperature, "vin de saignée" with a maceration during one night in cement vat.

This is large for a Rose...structured and focused, with the color of dark ruby. The nose is loaded up with fresh fruit. Strawberry, blackcurrant, and raspberry beam from the glass. On the palate, the mouth-feel is ripe and succulent. It has strength, but maintains its fresh and crisp expression. The finish is filled with Asian spice and slight hints of smoke. Drink this juice now or over the next year or two.

Produced from Dragon Mountain Vineyard, the wine is named after the Ogopogo -mythical lake monster. Grown overlooking Okanagan Lake.

The wine opens with notes of Granny Smith apple and stone minerality, followed by citrus and melon. On the Palate, it shows expressive flavors of pear, peach blossom, melon and lemon with a wonderfully long finish.


Cliff Lede Vineyards Cabernet Sauvignon Napa Valley 2021

Clif Lede Cabernet Sauvignon Stags Leap  is made from 82% Cabernet Sauvignon, 8% Merlot, 7% Cabernet Franc, 3% Petit Verdot.

Our Stags Leap District and Calistoga estate vineyards build the foundation of this wine with support from valued grower sites located in Oakville, Rutherford, and Howell Mountain. Composed of small batches from a variety of blocks of varying age, this wine represents a diverse range of carefully selected rootstocks and clones. Yields are maintained at sparse levels, with a focus on canopy management and vine balance. The resulting blend boasts a remarkable depth and complexity that is quintessential Napa Valley.

Grapes were picked in the darkness of the early morning hours. The freshly-harvested fruit immediately underwent rigorous selection by our three-tiered sorting process, which included our cutting-edge optical sorter. Whole berries were gently delivered by gravity to tank using our crane system, minimizing disruption of berry integrity. Cold soaks lasted approximately seven days, and fermentations were managed via a combination of délestage, pumpovers, and punchdowns. Extended maceration ranging from four to five weeks fine-tuned our tannin profiles, allowing us to perfect mouth feel and wine complexity. The wine was aged in French oak barrels, 48% of which were new, for twenty-one months.

Elegantly soft and lithe the 2021 coaxes the taster with warm dark chocolate and luscious black cherry aromas. More graphite, chocolate cake, crushed mulberries, and iron notes leap from the glass. The entry is filled with dark fruit flavors of cassis, blackberry, and blue berries and they’re all tinged with floral notes of jasmine and violets. The polished tannins along the finish feel Cashmere-like and beg the taster for another sip. – Christopher Tynan, Director of Winemaking

So silky and drinkable at the first sip, this well-concentrated wine feels tight and restrained with more tastes, holding its trove of black fruits, cedar, cinnamon and dark chocolate in a rich blanket of extra-fine tannins. Its complexity, layering and lingering finish are something special.

Clos Saint-Jean Chateauneuf Du Pape Vieilles Vignes 2019

Clos Saint-Jean Chateauneuf Du Pape Vieilles Vignes is made from a Grenache, Syrah, Mourvedre, Cinsault, Vaccarèse and Muscardin, the Châteauneuf-du-Pape Vieilles Vignes is made from old vines located in and around Le Crau. The Grenache is aged in concrete for 12 months while the remainder is aged in demi-muid.


Review:

A bigger, richer wine, the 2019 Châteauneuf Du Pape Vieilles Vignes has a similar style in its peppery garrigue, lavender, scorched earth, and licorice aromatics. It’s slightly darker fruited than the base cuvée and has a rock star of a mid-palate, building, sweet tannins, and a great finish. It’s one stunning bottle of wine to drink over the coming 10-15 years.

Rich and seductive in style, featuring waves of warmed plum sauce and blackberry purée flavors laced with singed alder, licorice root and tobacco notes, with flashes of ganache and warm earth in the background. Everything stays well-defined through the finish, which offers a late echo of minerality. Grenache, Syrah, Mourvèdre, Cinsault, Vaccarèse and Muscardin.

Colmant Brut Chardonnay NV

Colmant Brut Chardonnay is made from 100 percent Chardonnay (Franschhoek and Robertson). 
15% of the base wine has been barrel fermented.
Ageing: This wine spends a minimum of 45 months on the lees at a consistent temperature of 14C before degorgement.
Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time. 
Drinking tips: Ideal with pan fried scallops or line fish "au beurre blanc", it is also the oyster's best friend and will enhance the flavors of parmesan, asparagus, artichokes, parma ham,…

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. The wine is thoughtful and focused, and the finish leaves my mouth watering; there is serious acidity here, and they are doing it right. Colmant is the little guy doing some really great things— quietly focused wines, with serious aging potential. Keep this small producer on your radar. Corinne Perchaud Chablis AOC 2022

Corinne Perchaud Chablis is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.  

Pairs well with Oysters or shellfish and Sole Meunière.
