Cave Carod Clairette de Die

Cave Carod Clairette de Die is made from 75% Muscat Petits Grains and 25% Clairette. Clairette de Die is produced with the ancestral dioise method. 
The grapes are rapidly pressed after the harvest and then placed in vats at low temperatures (replicating the process used by the Voconces in ancient times who kept the jars in the icy waters of their local rivers). The half-fermented must is bottled and fermentation continues in the bottle, giving a naturally sparkling wine. Disgorging occurs at least six months after bottling, while the wine still contains sugar and has reached an alcohol content of 7 to 9 %.

This is a sparkling wine with very fine bubbles, light in alcohol (8°), and containing residual sugar (incomplete fermentation). Clairette de Die has been known since ancient times (dates back to 77 A.D.). Clairette brings delicacy and lightness to the wine whereas Muscat gives its typical sweet flavor. The wine displays intense aromas, a refreshing balance of fruit and acidity with peach, orange and white flowers flavors.
This is an ideal wine for all desserts and ice creams, and is very interesting with foie gras. It is especially suitable for daytime meetings and cocktail parties.  A great breakfast wine!
Wine to be consumed young, to conserve the full fruity and floral flavors.  To be stored flat in a cool room away from light.

A small, inaugural release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California’s diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet. Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. We farm Cabernet grapes in eight of Napa’s 16 sub-appellations, with diversification enabling us to make the best possible wine in a given year. This Cabernet offers layered, lush aromas and flavors, including cocoa, cassis and ripe dark berries.

Cazaux Gigondas Cuvee Prestige 2020

Cazaux Gigondas Cuvee Prestige is made from 50% Grenache, 30% Syrah, and 20% Mourvèdre.

A blend of Grenache, Syrah and Mourvedre produced from the oldest vines of the estate and only in the years of highest grape quality. Aromas of prune, chocolate, spices, fruit brandy and plum. Rounded tannins and a long finish.

"I was also able to taste the late-release 2020 Gigondas Cuvée Prestige, which is 50% Grenache, 30% Syrah, and 20% Mourvèdre that was brought up in barrel. It has a rocking nose of Provençal spices, saddle leather, dried flowers, and assorted strawberry and raspberry fruit. It's medium to full-bodied, has fine tannins, beautiful overall balance, and a great finish. Count me in as a fan. Enjoy bottles any time over the coming 7-8 years."

Cazaux Vacqueyras Rouge Cuvee Saint Roch 2020

Cazaux Vacqueyras Rouge Cuvee Saint Roch 70% Grenache, 25% Syrah and 5% Mourvedre. 

Deep color. Intense and persistent red fruits, such as strawberry and black cherry. Expressive and delicate at the same time. The finish is long and the tannins are quite round and well balanced.

Grapes are hand picked, destemmed 100% but not crushed. About 20 days fermentation according to vintage. Aged in stainless steel tanks for 12 months and an additional 12 months in enamel coated concrete tank. No fining, light filtration.

Enjoy this wine with meat cooked in red wine sauce (such as Boeuf Bourguignon).

Cellier du Chateau de la Chaume Petit Chablis 2023

Cellier du Chateau de la Chaume Petit Chablis is made from 100 percent Chablis.

Color: Pale yellow
Bouquet: White flowers, honeysuckle, linden tree and dried fruits.
Palate: Very pleasant, balanced with tension and nice minerality


Drink as an Aperitif or pair with fish, shellfish.

Chakana Estate Red 2020

Chakana Estate Red Mendoza is made from 70% Malbec, 25% Cabernet Sauvignon, 5% Cabernet Franc

Deep red color with violet hints. Dark fruits and exotic spices with tobacco and mocha hints. Elegant, well balanced, harmonious, long persistence with chocolate flavors.

Vineyard: Gualtallary in Valle de Uco.

2 days maceration on skins in temperature controlled steel vats; 12 days fermentation with selected yeasts allowed to rise to a maximum of 28°C.

Chateau Arnauds des Bordeaux Rouge 2021

Chateau Arnauds des Bordeaux Rouge is made from 100% Merlot.

The wine shows a deep red purple color and intense aromas of black fruits (blackcurrant, black cherry) with hints of liquorice. Very fruity and well-balanced. It is powerful and well structured in the mouth with round and silky tannins, ripe flavors of black fruits. Strong and a slightly spicy finish.

Grapes are coming from 30 year old vines planted on gravelly soils. 

The land benefits from sun exposure, warmth and humidity that are strong assets for the vine culture.

The wine pairs well with game meat and beef on the grill.

Chateau Bourdieu Absolu Blaye Cotes de Bordeaux 2018

Chateau Bourdieu Absolu Blaye Cotes de Bordeaux is made from 79% merlot, 17% Cabernet Sauvignon, 4% Malbec.


When Luc Schweitzer was joined by his two sons Richard and Ludovic at the estate, he wanted to embrace this new chapter in the family history and launched in 2016 a special cuvée from Château Bourdieu called "Absolu". This top-of-the-range cuvée is the best of what their terroir has to offer. The 35 year-old facing south vines benefit from a meticulous care: regular maintenance of the soil, yield control, manual leaf stripping, sorting of the berries - all practices that ensure the quality of this great Bordeaux wine.

A deep garnet color with magnificent purple highlights. The nose is intense and full, revealing notes of ripe black fruits and subtle hints of vanilla and roasted coffee. Great structure with finesse and tannic density that brings depth and length to the mouth. The aromatic purity of the perfectly ripened grape varieties is magnified by the complex and subtle oak flavors.


Pair: Rib of grilled beef and tournedos Rossini - butter pan-fried beef filet served on a crouton, and topped with a hot slice of fresh foie gras.

Chateau Castegens Cotes de Bordeaux Castillon 2018

Chateau Castegens Cotes de Bordeaux Castillon is made from 80% Merlot, 18% Cabernet Franc and 2% Cabernet Sauvignon.

The wine boasts an intense, deep and lively red color. The nose offers black fruit, blackberry, cigar box, licorice, some delicate and integrated oak flavors as well. The mouth is full of fruit flavors, spice and fine toasty flavors. The structure is rich, but the tannins are well integrated already. The finish is long and a slight mintiness give the wine a great length and some purity.

Pairs great with meat and vegetables on the grill.

Chateau de Saint Cosme Gigondas Hominis Fides 2021


Hominis Fides is typically the most elegant of Château de Saint Cosme’s three single-vineyard Gigondas. “Grenache grown in the sandy soil produces marvelously textured wines as well as extremely refined tannins; a very special and stylish wine,” says Louis Barruol. The wine features aromas and flavors of pepper, truffle, graphite, and smoke.

Grenache is the pale-colored, red-fruited, and potpourri-scented red grape variety of the southern Rhône and can be paired with both rustic and sophisticated dishes. Full-bodied Grenache-based wines are ideal with stews, braises, and grilled meats, while lighter versions can work well with dark fish and tomato-based dishes such as ratatouille.



Review:

Deep, vivid ruby-red. Intensely perfumed, mineral-tinged scents of medicinal cherry, redcurrant and cassis are complemented by suggestions of star anise, white pepper and pungent flowers. It offers densely packed bitter cherry, red berry liqueur, lavender and licorice flavors that open up very slowly with air. Extremely primary but highly promising, with a long, spice- and mineral-tinged finish shaped by youthfully firming tannins. Made with 100% whole clusters; raised in barriques, one-third of them new.

Chateau de Saint Cosme Saint-Joseph 2021

Louis Barruol describes the microclimate of the vineyard Malleval as “very cold” which allows the grapes to retain acidity and showcase the floral aromas of the local Sérine variety. Aromas and flavors of blackberries and wild strawberries are accented by notes of peppercorns, tobacco, peonies, and violets.

Syrah, with its deep flavors and firm tannins, is a natural match for grilled or smoked meat and dishes featuring herbs, roasted mushrooms, and onions. Seared venison or beef with black pepper and thyme or a Moroccan tagine of pigeon or chicken are complimented by the spicy characteristic of Syrah. 

Review:

Stacks of dark forest berries plus notes of smoke, pepper and tar make this a very expressive St.-Joseph. Impressive depth and ripeness for the 2021 vintage on the front and mid-palates, then the stony minerality kicks in giving it more power at the sleek and structured finish. Drinkable now, but best from 2024.

Eight hectare property in the town of Saint-Emilion. Elegant and structured wine, keep for 10 to 15 years depending on the vintage.

Review:

Vines with an average age of 35 years have produced a concentrated wine. It is rich and full, while also having restraint and elegance. That makes for a fine balancing act of generous tannins and opulent black fruits. Drink the wine from 2021

Chateau Mazane Vacqueyras Rouge 2020

Chateau Mazane Vacqueyras Rouge is made from 60% Grenache, 25% Syrah, 15% Mourvedre.

Ages in 30% Aged in oak, 70% concrete vats.

Medium-bodied, pure and elegant. It offers plenty of plum, blueberry, spring flowers and peppery notes. Beautifully textured, enjoy it over the coming 6-7 years.

Pair with with duck (roasted or grilled) as well as any grilled vegetables (eggplant, zucchini).

Soil types
The vineyard stretches over the plateau of scrubland that is ideally located between the terraces of the Ouvèze (tributary of the Rhone) and Dentelles de Montmirail, and constitutes pebbles soil debris of Dentelles de Montmirail and clay.

Winemaking
Traditional winemaking, temperature controlled fermentation.

"The 2020 Vacqueyras Château Mazane is terrific and well worth seeking out. Based on 60% Grenache, 25% Syrah, and the rest Mourvèdre, this medium-bodied, supple, elegant Vacqueyras has lots of red and black fruits, complex notes of peppery garrigue, sandalwood, and spice, polished tannins, and a great finish. Drink this beauty over the coming 7-8 years or so."

Chateau Vermont L'Ame Grand Vin de Bordeaux is made from 40% Merlot, 30% Cabernet Franc and 30% Petit Verdot.

L'AME de Vermont represents the culmination of 10 years of dedicated work, derived from select grapes of Chateau Vermont's best parcels, chiseled to be the ultimate extraction of their terroir and Spirit. This cuvée is the Winemaker's soul. It is a reflection of the requirements, precise work and desire to achieve perfection.


A rare and confidential wine, vinified and matured in new oak barrels. Fine wine, elegant and well-balanced, with vanilla notes coming from the oak aging and subtle scents of ripe black and red fruits. A beautiful structure and great aging potential.


Chavy-Chouet Bourgogne Blanc Les Saussots 2022

Chavy-Chouet Bourgogne Blanc Les Saussots is made from 100 percent Chardonnay. A medium yellow straw color in the glass. On the nose, you will find layers aromas of cured lemon and hints of coconut and mango. On the palate, the juice has clean flavor, fresh acidity, and excellent balance. Vanilla notes follow through to the slightly creamy finish. 

The grapes from this wines are grown from the Meursault area. (either outside of the AOC limit or with younger vines).

Seafood, fish, salad or by itself as an aperitif. 

Drink this one now or over the next 3 to 4 years.
