Mordoree Tavel Rose Plume de Peintre is made from 60% Grenache, 20% Syrah, 20% Clairette.

Deep rosé color. Complex and intense aromas of red fruits. The palate is elegant and offers a great balanced acidity. The wine has a long lasting finish.  

Risotto with crayfish and asparagus, duck breast roasted with honey, poultry with morels. 

A deep and rich hue of golden straw gives the first clue that this is a serious Chardonnay. Aromas of pear, green apple, and lime peel jump out of the glass followed by more nuanced fragrances of orange blossom, ginger root, and brioche. The sensation on the palate casually demonstrates both broad depth and laser like focus. The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. The seamlessly layered flavors build to a crescendo of fresh and juicy black-fruit, accented with hints of orange zest, licorice and dark chocolate. Beautifully balanced, the smooth round tannins and fresh acidity combine to create a soft, creamy mouthfeel and extend the flavors into a long persistent finish.

Extremely perfumed and floral with lavender, lilacs and violets to the sweet, ripe berries, such as blackberries and blackcurrants. Some slate and graphite, too. Orin Swift 8 Years In The Desert Napa Valley is a blend of Zinfandel, Petite Sirah, Syrah.

The Eight Years in the Desert pours a dark mauve core with a red amethyst rim and aromatic notes of ripe blackberry and raspberry bramble. Further hints of chocolate covered espresso bean, black pepper and allspice emanate from the glass. The entry is dominated by black plum preserves and freshly baked mixed berry morning bun with an energetic yet concentrated mid-palate. Soft and textured tannins give way to a lifted finish with a touch of pluot and dried tarragon.

Ossian Quintaluna Verdejo is made from 100% Verdejo

Quintaluna is a young wine that is made exclusively from Verdejo in the province of Segovia. 60% is very old grape: pre-phylloxera (ungrafted). 40% is made of very young grapes on trellises, grown certified organic, with low yields. The key to success for the Verdejo grape is held in the soil. Ideal soil has a high content of sand and pebbles of different sizes. Some have higher proportions of clay and others have significant proportions of clay and limestone. As the pebbles and sand allow for good drainage, the clay holds enough moisture to allow the vines to thrive.

The color is a straw yellow with greenish reflections. On the nose, you will find aromas of white flowers, stone fruit (peach), and citrus (lemon, mandarin). It also displays tropical fruit aromas. The palate is complex. Natural acidity is evident in the freshness and length on the palate. Almond and ripe fruit flavors are found in the mid-palate with fresh grass and citrus on the finish.

It pairs wells with all kinds of appetizers, entrees and salads.

"The 2020 Quintaluna is pure Verdejo from small plots on sandy soils in the province of Segovia, fermented in stainless steel with indigenous yeasts. They still use grapes from external suppliers but are working toward using 100% their own grapes (which they might achieve in 2023); therefore, the wine is not certified organic, because some of the vineyards from the growers are not certified. It has a balsamic nose reminiscent of bay leaf, dried yellow flowers, chamomile and pollen intermixed with pit fruit. The nose leads with a bright pop of red fruit, including cherry and raspberry, followed by hints of cola and baking spices and a light herbal note. Meaty and dark-fruited nose. Full-bodied with slightly chewy tannins. I like the bright acidity and definition of fruit on the palate here. Lifted and juicy. Delicious.

Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.

The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

Pago de Carraovejas Cuesta de las Liebres 2019 is a red wine that masterfully blends finesse with a robust flavor profile. Upon olfaction, it unveils a complex array of nuances, with blueberries and blackberries taking center stage, complemented by undertones of sweet spices and hints of graphite and chocolate. On the palate, it is rich and full-bodied. This red wine boasts silky tannins, an extensive and enduring finish, and the exquisite signature of an outstanding vintage.

Palacio del Burgo Rioja Blanco is made from 100% Viura.

The wine shows a brilliant pale yellow color. The nose is elegant and very fruity, with straw and pineapple notes. The taste is intense, being extremely fruity with fresh balanced acidity.

Rioja Oriental is blessed with a warm, dry Mediterranean-influenced climate (unlike Rioja’s west, where the climate is more continental). The soils, formed by carbonate sedimentation with diverse colluviums containing deposits of volcanic ophite, quartz, and sandstone, covered with carbonate clay, sand, and silt. At varying depths, there is a poor, cold horizon containing petrocalcic calcium (calcium carbonate) with a distinctive white color—this is prized by many for its ability to impart a mineral-driven finesse to the wine.

Rioja’s eastern-most district is often described as flatter than its western counterpart but make no mistake—there is significant elevation here. The grapes for Propiedad represent the pinnacle expressions of Palacios Remondo’s terroir and come from three estate vineyards: Las Mulgas, Valviejo and Corral Serrano Viejo.

The soils between 0.5 and 2 meters thick are from the Quaternary Period, formed by carbonate sedimentation with colluviums of very diverse origin, containing volcanic ophite, quartz, sandstone, etc. covered with carbonate clay, sand, and silt. The exposure is east/northeast on the Yerga Mountain slopes with vineyard heights reaching between 400-640 meters (1,321-2,099 feet) above sea level with a vine age of 30-94 years old. The grapes were harvested between Sept. 28th and Oct. 6th.

The grapes were destemmed, crushed, and fermented with native yeasts in wooden vats with gentle cap immersion. Maceration took place over 35 days followed by spontaneous malolactic fermentation in barrel. Aging was 10 months in fudres and bocoyes (wooden cask) followed by fining but no filtration.

Propiedad is quite elegant but has remarkable concentration. Dried herbs, strawberry, blueberry, and baking spices ripple over subtle earthy notes and fine-grained tannins. The palate is seamless and beautifully balanced, sporting a mineral verve and seductive mouthfeel. Will age beautifully for a decade or longer.

A blend that is unique in Rioja, this combines mostly Garnacha with around 7% of Tinto Velasco, Graciano and Bobal, all sourced from a six-hectare parcel on the Monte Yerga. Rich, dense and concentrated, with remarkable intensity, focus and balance, nuanced oak and a fine,    refreshing    finish.    2020-28

The old-vine Garnacha 2017 Propiedad was produced with grapes coming from organically farmed vineyards in Las Mulgas, Valfrío, Valviejo and Corral de Serrano in Alfaro, vineyards that are organically farmed. The destemmed and crushed grapes fermented in oak vats with indigenous yeasts and the wine matured in larger oak vats (mostly 5,000-liter) for 12 months. It has the Mediterranean profile of the vintage with some jovial notes of orange peel and red cherries intermixed with aromatic herbs. The palate reveals fine-grained, slightly dusty tannins. The palate has more freshness than what you expect from the notes on the nose. This wine has a good evolution in bottle even in warmer years like this or 2015.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. The 2018 vintage is elegant, yet powerful and displays classic Hyde Vineyard traits of delicate white flowers, tangerine zest, and lemon cream. On the palate the wine is citrus-driven with orange and lemon flavors along with hints of toasted almond and vanilla. The wine has great acidity that leaves a white chalk/mineral note on the very long finish.

Piron Chenas Quartz is made from 100% Gamay - 60+ years old .

The Chenas Cru is the smallest Beaujolais Cru, not bigger than Côte Rôtie. This is a rare wine. The estate's unique parcel spreads over 22.2 acres of vines on a very steep slope facing East, situated between 310 and 380 meters above sea level. Granitic soils are covered with Quartz crystals and give the wine its own personality.

The vineyard is co-owned by Domnique Piron and Christian Lameloise, whose family owned Lameloise restaurant in Burgundy (3*** Michelin). Decanter classified the wine in the 3 best best bottles of Crus Beaujolais in 2015 (vintage 2013).

Hand harvest, sorting table, part destemming. A first stage of semi carbonic maceration during few days is followed by a more classic Burgundy maceration with « remontages » and « pigeages », for a total of 18-20 days, depending on the vintage.
30% of the wine are aged in recent French oak foundre and oak barrels (no new oak) during 12 months to bring roundness and complexity to the final assemblage.

Pairs well with complex dishes, meats, leaver, and why not a little pigeon with peas and diced bacon.
