This champagne was made to reflect the potential of each grape growing areas of the Champagne region.

The grapes for Georges Cartier Brut Tradition have been carefully selected from the 3 emblematic areas of Champagne. Chardonnay is sourced from the Côte des Blancs, Pinot Noir from Montagne de Reims and Pinot Meunier from the Marne Valley.

Each grape variety brings its own character and specific quality to the wine: Pinot Meunier brings fruit and roundness, Pinot Noir brings character, power, structure and balance, while Chardonnay contributes to the finesse, minerality and elegance of the result wine.

The blend in 2022 will be 70% 2018 vintage and 30% of reserve wines (consisting of 2014, 2015 and 2016 vintages).

It will be RD (meaning "Recently Disgorged") to keep freshness, fruitiness, minerality and elegance.

Hand harvest and hand selection, destemming and crushing . Pre fermentation maceration at low temperature during 6 days. Delicate and slow fermentation with selected yeast between 18 to 25 C during 12 to 15 days. Post maceration during 8 days. American and French oak aging during 9 months. Finally a blend is produced with wines of the same variety obtained from different plots to achieve the GIMENEZ MENDEZ Alta Reserva profile.

Pairs well with roasted red meats (parrilla-asado), pastas and well-seasoned cheeses. Ideal with lamb. Also very enjoyable with desserts and chocolate.

The 2022 Châteauneuf du Pape Le Miocene checks in as 70% Grenache, 20% Syrah, and the rest Mourvèdre, all destemmed, that was raised mostly in tank, with the Syrah and Mourvèdre in oak. It has a beautiful nose of ripe red and black fruits that give way to more licorice, black olive, peppery garrigue, and spices. Medium to full-bodied on the palate, it's balanced and has ripe, building tannins and a great finish. It's going to evolve gracefully for 10-12+ years.

Soil type DOMAINE GRAND VENEUR “Les Champauvins” stretches on 34 ha classified in Côtes du Rhône. The plots are located in the northern border of Châteauneuf du Pape, exactly from 3 meters outside the appellation. A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil (see picture). In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights . Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine. Winemaking & Ageing Traditional, in stainless steel vats. Harvest crushed and destemmed. Fermentation in temperature controlled vats at 28°C. Eighteen-day vating period with “pigeage”. Grenache is aged in concrete vats, Syrah and mourvèdre in 4 years old barrelsntense, brilliant garnet-red colour. Gravas Sauternes is a blend of 100% Sémillon.
The wine shows a lovely pale golden color with deep golden highlights. Round and well-balanced offering complex aromas of candied fruits backed up by a hint of exotic fruit (mango, guava) and white flowers. On the palate, it is ample and fleshy, leading into a silky and long finish.   

The wine pairs well with white meats, scallops, exotic and spicy dishes, foie Gras, Roquefort blue cheese, chocolate desserts.

Graviere La Rouge Cuvee les Terrasses is made of 70% Merlot and 30% Cabernet Sauvignon

Deep red color with a narrow purple rim. Attractive aromas of ripe, juicy cherry and blackberry over spice, integrated toasted aromas. The palate is balanced and full-bodied with supple tannins, displaying rich cherry flavors combined with gentle toasting characters and a touch of spice. The finish is lasting with a bitter almond aftertaste.

Average age of the vines is 25 years. 
 Upon arrival at the winery, only the best grapes were selected using a sorting table.
Skin contact maceration during 2 weeks in temperature controlled vats. 
75% of the final wine was aged in stainless steel tanks with French oak staves and blended with 25% of wine aged in barrels.

This vineyard is located on a mountain ridge north of Fort Ross on the Sonoma Coast at 700 feet elevation, and the wine was aged for 14 months in 39% new French oak. The 2019 Chardonnay Far Coast Vineyard offers more lime citrus, saline minerality, and white peach, and the palate is fresh, energetic, and consistent with the nose. Texture-wise, it is markedly different, with more focused structure and tension.
