Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time.

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. The wine is thoughtful and focused, and the finish leaves my mouth watering; there is serious acidity here, and they are doing it right. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.

With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. Destroyer North Coast Red is made from 65% Cabernet Sauvignon 20% Merlot 10% Zinfandel 5% Syrah

Domaine de Beaurenard Chateauneuf-du-Pape Blanc is made from Clairette blanche & Rose, Grenache Blanc & Gris, Bourboulenc, Roussanne, Picpoul and Picardan.

A very elegant expression of Echezeaux, with a velvety black plum and rose petal fruit. There is a lovely freshness and so much finesse that the tannin and structure might surprise you at the end. This has the substance to age for decades. Produced from a 0.84ha parcel in Cruots next to Comte Liger-Belair. The vines were planted in 1954 and the destemmed fruit was gently fermented.
This is pure, racy and enticing, hosting aromas and flavors of black currant, blackberry, violet and iron. This is about finesse, grace and precision balance, with saturated fruit flavors persisting on the superlong aftertaste. Needs a decade in the cellar.

Aux Boudots, where Grivot has 0.85ha, is at the northern edge of Nuits, just over the border from Vosne-Romanée Malconsorts. They began to pick on the 3rd of September – Etienne specified that they are very particular that the tannins are ripe and do what they can to prolong the vegetative cycle. Still, the grapes were picked with an entirely correct pH of around 3.4.

The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

‘The 2021 Volnay Les Champans Ter Cru has much more brightness and delineation than the Fremiets this year, with red cherries, wild strawberries and ust a touch of iodine and sous-bois. This is nicely focused. The palate is medium-bodied with sappy red fruit, fine structure, pliant tannins and a harmonious finish. Not the most complex Champans encountered from this address, yet it has class.

The 2021 les Champans is also a simply stunning example of this fine premier cru vineyard. The beautifully elegant nose wafts from the glass in a blend of red and black plums, cherries, spit-roasted quail, a complex base of soil, woodsmoke, coffee bean and a deft touch of vanillin oak. On the palate the wine is pure, full-bodied and shows off superb depth at the core, great soil signature, ripe, fine-grained tannins and a long, nascently complex and very promising finish. This is a touch more reserved on the palate than the Fremiets and will take a bit longer to blossom, but it is going to be stellar. 2034-2085.

The Domaine Joseph Voillot Volnay Les Fremiets Premier Cru is from a parcel that is up-slope, and the wine is very calcaire, or limestony; you literally taste the stone in this elegant, intensely perfumed wine. Pair with veal filet mignon, squab, beef steak and roast duckling.

I really like this terroir and the 2021 is an absolutely classic example of this fine premier cru, offering up a refined and pure bouquet of black plums, dark berries, coffee bean, a complex base of dark soil tones, a nice touch of new oak and plenty of upper register smokiness. On the palate the wine is pure, full-bodied and very elegant in profile, with a superb core, lovely soil signature, ripe, suave tannins and a long, vibrant and complex finish. Chablis achieves its highly distinctive mineral character due to its cool northerly climate and its highly calcareous soil. The Domaine Louis Moreau Chablis Vaillons Premier Cru is a generous, fleshy and lively wine that displays a beautiful balance of minerality, fruitiness and elegance.

Domaine Meo-Camuzet Corton Les Perrieres Grand Cru 2020
Your first impression of Les Perrieres is that of a typical Corton, as it is so frequently described: austere, slow to mature, tannic. But that impression should be moderated because the wine is apparently multifaceted: frankness, certainly, but also an underlying structure that lines the palate and a finish marked by minerality. There's no heaviness, which facilitates the expression of this complexity. A long ageing period is certainly beneficial.

Es Lo Que Hay Garnacha is made from 95% Garnacha, 5% Moristel, Miguel de Arco and Provechón (Bobal). 75 to 100 year old vines.
“ES LO QUE HAY - it is what it is. A common Spanish expression, but one I like to reserve for the few old high altitude Garnacha vineyards that survive in Aragon . What you taste in the bottle is a true expression of what there is in the vineyard. It´s as simple as that.”
High altitude ancient vineyards (75-100 years) at 1,000 to 1,100 meters above sea level with Pizarra slate and quartzite soils. Completely dry grown and unirrigated, this is an inhospitable continental climate with extreme changes of temperature where mountain herbs, almonds, cherry trees and Garnacha form a breathtaking patchwork. Low annual rainfall of 200-300mm and the remarkable soils produce fine and elegant Garnacha which is punctuated by intense black fruit flavors with complex mineral, smoke and garrigue notes.

"The red 2019 Es Lo Que Hay is mostly old-vine Garnacha with 5% other grapes, mostly Moristel with a little Miguel de Arco and some Provechón (Bobal), from very stony old vineyards in the village of Villarroya de la Sierra. The grapes fermented together with 20% full clusters in concrete and were destemmed after a five-day cold soak with the natural yeasts; then the wine matured mostly in concrete with some leftovers in Flextank egg for 15 months. It's ripe without excess (14.26% real alcohol), balanced by low pH and good acidity and has a powerful Mediterranean profile, round and full-bodied, with hints of dry hay and straw and a touch of dark chocolate. "The 2019 Garnacha Vinas Viejas is just about all Grenache (there are small amounts of Moristel, Miguel de Arco, and Bobal) from ancient vines that saw a touch of stems and aging in concrete tanks. Mordoree Chateauneuf-du-Pape La Reine des Bois is made from Grenache 75 %, Mourvèdre 10%, Syrah 10 % , Counoise 3% & Vaccarese 2%.
This premium cuvee - whose name means "Queen of the Woods" - is from 65-year-old vines, planted on Villafranchian-era terrasses. Yield is 30 hl/ha.
Deep ruby red; opaque. Aromas of red fruits change to wooden touches of leather, black truffles and coffee. Fat, concentrated and full flavored with a very long liquoriced and fruity finish.
Pairs with red meats, sauce dishes, game animals (woodcock, wild boar) and semi mature cheeses.

"Huge and powerful, but so fresh. This has great driving intensity, with even bigger, more structural tannins than the domaine’s other cuvée. A rampaging Châteauneuf that will take time to settle, and will always be wild. Long, vibrant and chiselled. An absolute beast. Mordorée has been massive but overripe in the past; it's still massive but with this vintage the ripeness is more controlled, and it has transformed into something extraordinary. Fermented and aged 80% in stainless steel, the rest in old barrels. - Matt WALLS"
