Early to bud and early to ripen, the 2014 vintage was our third drought year in a row. Dry, even temperatures marched the grapes along at a steady clip all year and created a wine with beautifully integrated fruit, acidity, and tannin.
Dense and dark magenta in color, this is a lithe and energetic vintage with lifted aromatics and a purity of fruit that lights up the medium-bodied tannin structure. The nose promises fresh black fruits, cherries and a touch of graphite, and the palate completely delivers. "The 2014 Cabernet Sauvignon is 100% Cabernet aged 20 months in 86% new French oak, with the typical suspects in terms of cooperage – Darnajou, Taransaud, and Remond. This opaque purple-colored wine has plenty of mulberry and blackcurrant fruit along with hints of blackberries, camphor and incense. The are some notes of unsmoked cigar and licorice as well. Delas Hermitage Les Grandes Vignes Ligne de Crete is made from Syrah. 

The nose discloses aromas of spice and leather intertwined with deep berry aromas (blackberry, redcurrant) and heady floral notes, liquorice and incense. Its richness, complexity and elegance are by no means a contradiction. The finest granite soils of the Hermitage hillside are to thank for this wine's incredible minerality and finesse. The wine is rich and dense on entry to the palate, where it shows an elegant, broad and flavorsome character. The ripe, smooth and well-integrated tannins contribute to the wine's powerful yet harmonious structure. The palate reveals the same aromas as those found on the nose with nuances of blueberry, raspberry, violet and bitter chocolate. Ligne de Crête is characterized by its exceptional structure, harmony and balance.

This remarkably smooth and elegant wine makes the perfect partner for a pigeon pie, beef tartare ravioli or a roast fillet of deviled duckling with cranberries. It also makes an excellent choice for woodcock, hare "à la Royale" or even a roast rack of lamb in a herb crust.

Domaine Sipp Mack Alsace Pinot Gris Grand Cru Rosacker is made from 100 percent Grand Cru Pinot Gris. 

Rigor and diligence were the key words for this emotional 2016 vintage!

The year starts with heavy rainfall and low temperatures, severely delaying the growing cycle. The month of May sees temperatures increase and the tropical atmosphere favors the development of mildew. Finally, the dry and sunny summer allowed our heavy soils to avoid maturity blockages linked to water stress. The 2016 harvest started in early September and ended 7 weeks later, a record!
In the cellar, the sanitary condition was very good, the wines developed freshness, complexity and fine, ripe acidity.

SITUATION

Fresh notes of mango and peach, enhanced by a sweet sensation, dominate the palate. The finish is long thanks to a lively acidity. It will go perfectly with white meats, firm fish and cheeses with character.

Ripe, pristine notes of yellow pear on this wine's nose come with notions of creamy banana and vanilla. The palate carries rich, concentrated fruit, but in a precise fashion that channels the rounded ripeness into smooth generosity. The 2021 Cabernet Sauvignon is cut from the same cloth, with plenty of richness and depth, yet it stays slightly more focused and tight on the palate, with medium to full-bodied richness as well as beautiful darker currant, cassis, darker chocolate, graphite, and hints of flowers. It's concentrated and has beautiful mid-palate density, ripe yet building tannins, and a great finish. It's another undeniably delicious, hard-to-resist Cabernet Sauvignon from the talents of winemaker Thomas Rivers Brown. Give bottles a decant if drinking any time soon and enjoy over the coming 10-12+ years. Maturity 2023-2035.

Faust The Pact Cabernet Sauvignon is made from 96% Cabernet Sauvignon, 2% Petit Verdot, 2% Merlot.

Dark, exotic spice-with star anise in the lead—opens on a complex nose layered with sweet tobacco, savory herb and olive notes, and a lovely vein of graphite minerality under briar-kissed blueberry. The palate is electric, its deceptive power couched in chalky, tight-knit cannins. Black raspberry joins blueberry, with wet slate and soil-driven, iron-rich minerality spilling into a long, perfectly balanced finish, serious and hedonistic at once.

Review:

So many graphite and pencil shaving aromas here with blue fruits. Slate and tar undertones. Black and red currants. Some ash. Medium-bodied with open grained tannins. So much iron and rust with lead and mussel shell. Then turns to pine cone and cedar. Really complex and flavor intensive. Love to drink it now as a young wine. This evolves all the time. It will age beautifully. Better in three to five years. But I can’t wait.

GRAPE

Finca Sobreno Ildefonso Toro  is made from 100% Tinta de Toro
Very Old Vines (Minimum 80 years of age)
Aged in 100% new French Oak Barrels for 18 months + 12 months in the bottle

The wine is produced in very limited quantity from the estate's oldest vineyards (80 years old vines) and is fermented in 2,000-liter open-top fermentation vats. Our winemaker punches down the cap by hand three times a day using the traditional pigeage method to ensure optimal extraction.

The name of the wine is the surname of the San Ildefonso family, father Roberto and daughter Paloma, and represents the apex of their winemaking tradition.

Tasting notes
Deep cherry color.
Very expressive, elegant and complex with ripe fruit, mineral notes, sweet spices, chocolate aromas and intense toasts.
Powerful, tasty, round and very smooth. We find again black berries, mineral notes, chocolates with roasted aromas. Very long after taste.

Soil types:
The soil is formed by sediments of sand, clay and limestone, which produce a dark lime-bearing topsoil, with fine and coarse sands.
This year we had low rain falls getting very healthy bunches. Besides, cool nights and not very hot days at the end of the cycle were excellent for a complete ripening of the grapes, full of nuances.

Winemaking and aging
The fruit is manually selected and picked in small cases. After destemming the grapes are stored in 2.000 liter open fermenter tanks and cold maceration at 8ºC during 8 days. Three times a day the cap of the skins is submerged manually (pigeage) and after the alcoholic fermentation is finished at a controlled temperature, the wine is macerated until the wine maker determines the appropriate extraction polyphenols. The malolactic fermentation is carried out in new French oak barrels. The wine was aged in new French oak barrels for 16 months, followed by another 12 months minimum in the bottle.

Ideal for red meats, lamb, roasted meat and strong cheeses

The deep purple-hued 2017 Ildefonso Toro offers up classic aromatics of spicy red and black fruits, vanilla bean, graphite, cheese rind, and scorched earth, which carry to a medium to full-bodied red that has nicely integrated tannins, a round, layered mouthfeel, and a great finish. Aged 18 months in 70% French and 30% American oak, it should evolve gracefully over the coming decade.

Florence Cholet Meursault Blanc is made from 100 percent Chardonnay.

This classic Meursault offers expressive and complex aromas of white flower, white fruit, and herbal aromas. Bright acidity and minerality emerge on the palate from this beautifully balanced and structured white, followed by subtle hints of vanilla and toasted brioche nuances in a refreshing finish.
