Ceretto Barbaresco DOCG is made from 100 percent Nebbiolo. 

If we could sum this wine up in a single word, we wouldn’t hesitate to define it as “classic”. As tradition suggests, this Barbaresco is the fruit of the assembly of several parcels of land, coming from some of our most beautiful vineyards. The idea is that of naturally obtaining balance by harmonizing different expressions, often contrasting ones. The result is a liquid expression of a terroir, tempting and typical, a synopsis of one Langa, that of Barbaresco, which moves in the glass, alternating between structure and elegance.

Copain Wines Pinot Noir Anderson Valley is made from 100 percent Pinot Noir. 

Les Voisins, or "the neighbors" is sourced from some of the best vineyards in Anderson Valley to create a wine that displays the region's unique terroir. Underlying notes of graphite, conifer, fresh flowers, orange peel and wet sandstone add to its complexity. Taking on a touch of darker fruit, the 2021 Pinot Noir Anderson Valley brings forward aromas of black raspberry, red cherry, cinnamon, and candied flowers. Its ripe tannins come through on the finish cleanly, offering a lot of charm. Drink over the next 5-6 years.

It's concentrated and has beautiful mid-palate density, ripe yet building tannins, and a great finish. It's another undeniably delicious, hard-to-resist Cabernet Sauvignon from the talents of winemaker Thomas Rivers Brown. Grand Veneur Cotes Du Rhone Les Champauvins is made of 70% Grenache, 20% Syrah and 10% Mourvedre

Les Champauvins” stretches on 34 ha classified in Côtes du Rhône. The plots are located in the northern border of Châteauneuf du Pape, exactly from 3 meters outside the appellation. It is located in the lieux dits of "Champauvins" and "Coudoulet". A small lane of rocks going through the rocky plateaux has been decided to be the AOC limit in 1936. Here, soils are made of red clay and rocks (pebbled stones of quartz). The quantity of rocks can be amazing as they can completely cover the soil. In summer and during the day, the rocks temperature will increase to 55°C. This accumulated heat will be get back to the vines during nights. Day after day, this unique phenomenon allow the grapes to reach a perfect maturity and produce a unique wine.

Heritage School Missiaens Hillside Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

A steep, rocky site with red volcanic soils results in our most structured and concentrated wine. Planted in 1998 using 110R rootstock and clone 337 Cabernet Sauvignon our Hillside Vineyard produces wines as breathtaking as the views from its slopes. These tiny, dark blue berries ripen near the end of September thanks to cool afternoon temperatures allowing for increased hang time and developed flavors.

Reverdy Jean Sancerre Rose is made from 100 percent Pinot Noir.

Color: Pale salmon pink color
Nose: delicate aromas of roses and orange blossom that will transform into gooseberry and peach blossoms as the temperature in the glass rises. 
Mouth: The palate is crisp, lean and elegant, but the flavors are quite persistent with cherry, blackcurrant,apricot and red currant aromas.

According to the Sancerre AOC regulation, maximum yield authorized for the rosé is 55 hl/ha.

Pairs well with poultry and spicy food.

Kershaw Syrah Deconstructed Lake District Cartref SH22 is made from 100 percent Syrah.

The inspiration for this Syrah stems from my belief that the Elgin region has both a signature grape as well as particular terroirs within its demarcated boundary that reflect regional credentials. This Syrah was selected from a sub-region of Elgin from a specific vineyard and an individual clone.

Sourced from a single parcel in the Western part of Elgin, the 22 clone produces fuller, well-colored yet finely structured wines. They tend to be more concentrated as yields are low with more black fruit, black pepper and meaty notes. The Cartref soils, a mixture of decomposed sandstone, pebbles and quartz, add gracefulness and heighten the fruit intensity.

The grapes were handpicked under autumnal skies into small lug baskets and then manually sorted on a conveyor before the stems were removed. The destemmed berries fell onto a vibrating table in order to remove jacks and substandard berries before dropping uncrushed into a small 500kg conical hopper and forklifted into open-topped fermenters. The grapes underwent a 3-day maceration before spontaneous fermentation began. A gentle pigeage (punch-down of the cap) program was charted and the grapes remained on skins for 26 days. The wine was then racked to barrel under gravity and the remaining pomace basket-pressed. Malolactic then proceeded in barrel followed by a light sulfuring and 17-month maturation. No finings were necessary and the wine was simply racked and bottled unfiltered.

"The 2017 Kershaw Deconstructed Lake District Cartref SH22, matured 50% in new oak for 17 months, is a little more open on the nose compared to the SH9c and delivers a touch more red berry fruit, quite candied in style and suggesting strawberry pastilles. This wine is a response to our quest to find the perfect wine, one that combines structure, complexity and balance. It is the result of a careful selection of grapes not from the vines but from the appropriate clusters, those that naturally produce three or less clusters and which are 60 or more years of age. Vines situated on slopes and terraces of limestone and clay soil, well exposed to the sun. These grapes are harvested in small boxes at the very best moment, then inspected on the selection table and vinified in small groups at a controlled temperature. After alcoholic fermentation they are macerated to extract their full potential. The resulting most is then settled in new French and American oak barrels to undergo malolactic fermentation. This second fermentation ensures the wine gains in complexity and aromatic intensity, it also stabilises its colour.

Fully ripened and concentrated fruit aromas with balsamic and spicy mineral nuances, notes of blackberry and blueberry preserve wrapped in creamy oak, caramel and milky coffee tones. The palate is concentrated, unctuous in the centre, balanced, sweet, with fine tannins. Very long finish, expressive, clearly marked with the character of the soil.

Hiru 3 racimos is a complex wine and so is its pairing with food. We must consider two options, either drink it in light sips so that the wine itself is the star of the feast, or serve with solid dishes that can match its vigour. An Iberian pork loin with roasted peppers, steak with mushrooms and plums, wild boar stew or pheasant in port are dishes that blend incredibly with this characterful wine.

Maggy Hawk Unforgettable Pinot Noir is made from 100 percent Pinot Noir.

 HARVEST NOTES

All plants require water to grow, and grapevines are no exception. The 2021 growing season was our driest yet. The Maggy Hawk vineyard relies on rainfall in the winter and spring to fill our vineyard ponds to irrigate our vines during the summer months. These ponds ran dry a few weeks before harvest began. Fortunately, the grapes made it across the finish line without being affected by the drought. We typically harvest over 2-3 weeks. In 2021, everything was ready at once, and we harvested in just one and a half weeks. The clusters had a shorter ripening period and were harvested on the earlier side, which produced wines with intense hues, great acidity, and concentrated aromas and flavors.

WINEMAKING

Our 2021 Unforgettable Pinot Noir is crafted from a unique selection of five blocks and three clones from all corners of the Maggy Hawk vineyard. Upon arriving at the winery, we separate the individual blocks and allow the grapes to cold soak for 5 days before raising the temperature and beginning fermentation. The fruit is then pressed very gently, and the free run is kept separate from the harder pressing and racked down to barrels. The wine is allowed to go through malolactic fermentation on its own before being left to age in 30% new French oak barrels for 17 months. Finished unfined and unfitered.

Freshness, power and persistence. Unforgettable delivers a pronounced mix of fresh black cherry and red plum balanced by hints of dried lavender, bay leaf, anise and potting soil notes. A perfect balance of structured and juicy with smooth, rounded edges on the palate due to integrated tannin.

This wine is opulent, with aromas of Black cherry, red currant compote, cinnamon spice, and fresh florals on the nose. More pure framboise, minty flowers, and chalky minerality all define the aromatics of the 2023 Tavel La Dame Rousse, and this beauty is medium to full-bodied, with a pure, layered, seamless mouthfeel, flawless overall balance, and a great finish. The blend is 60% Grenache, 15% each of Cinsault and Syrah, and the balance Clairette, coming from a mix of three terroirs: pebbles, limestone, and sand.

Piper-Heidsieck Rare Brut Champagne  is made from 70% Chardonnay, 30% Pinot Noir.

The effervescence of Rare Millésime 2013 is tinged with an intensely bright, light golden color. The nose, at first subtle and clean, emerges in two stages combining tonicity and elegance. It all begins with the delicacy of white flowers, a hint of black tea and touches of citrus, kiwi and kumquat. Then, notes of lime blossom, green tea and fern give way to aromas of white fruits such as greengage plums. Touches of chestnut honey, sweet spices, vanilla and marzipan round off the wine's rich bouquet. The two facets of Rare Millésime 2013 are confirmed in the mouth: smooth and vibrant, indulgent and dynamic. After hints of meringue, whipped cream and marzipan, kumquat, blood orange and kiwi then provide a refreshing tonicity. On the finish, the comforting texture of Rare Millésime 2013 appears as an aromatic and smoky indulgence punctuated by a freshness and a subtle bitterness. Eikun sake uses water from a source called "Fusui", rated as one of the top 100 sources of water in Japan. This water source is located just south of the ancient Japanese, and still cultural capital of Japan, Kyoto. 

TASTING NOTES:
This is a classic, delicious Honjozo with crimini mushroom, almonds and lilac aromas. The first sip of this sake is full of stone fruit and minerals complimented by notes of caramel, cocoa and almond and finishes with plenty of umami.
