Bydand Pinot Noir Umino Vineyard is made from 100 percent Pinot Noir.
This small, sustainably farmed vineyard perches on a south-facing ridge in the Sebastopol Hills area of the esteemed Russian River Valley AVA, and has produced exceptional Pinot Noir for Bydand since their first vintage. Third-generation farmer David Umino rejected early assessments that the site was too cool for viticulture, and planted Pinot Noir there in 1996. The cold maritime winds in fact help to modulate ripening, and protect the grape’s natural purity and balance - resulting in fruit-driven wines with expressive red fruit and dark berry flavors, balanced with crushed rock and mouth-watering freshness. Velvety tannins coat the palate, providing an alluring and persistent finish.

After a short period of maceration on skins, the grapes are soft pressed. The clear must obtained ferments slowly in stainless steel vats at a controlled temperature of 16-17°C. The wine spends a long period of time on the fine lees, with frequent “batonnage”

Caymus has a signature style that is dark in color, with rich fruit and ripe, velvety tannins – as approachable in youth as in maturity. Cazaux Vacqueyras Rouge Grenat Noble 100% Grenache.
This wine is the result of extraordinary weather conditions. The first cuvée was produced in 1992 when violent storms and floods affected the region (especially Vaison la Romaine). The following days were radiant and accompanied by Mistral winds. We could then continue to harvest or more precisely harvest what remained of a rotten crop - but a noble rotten crop!
Following our first involuntary test of 1992, we wanted to reproduce this wine but we had to wait until 1995 to isolate the parcels that were capable of producing this noble rot. Unfortunately, the "noble" phenomenon does not occur every year despite late harvests (October 15).
The resulting wine is offers aromas of small red berries (cherries, raspberries), liquorice, fig, honey, fruit brandy and plum. It is elegant, supple and smooth on the palate with a firm, generous and suave structure. A beautiful length on spices and cherry.
This Grenache nectar marries will with dishes such as pan-fried foie gras in honey and fig preserve, leg of lamb with preserved fruits accompanied by local cereal "epautre" or other sweet and sour dishes.

Celler Vall Llach Idus
Since its founding in the early 1990s by celebrated singer Lluís Llach and notary Enric Costa, Celler Vall Llach has committed itself to rigorous quality standards. Located in the tiny mountain town of Porrera in the D.O.Q. Priorat, the winery is now headed by Enric’s son Albert as winemaker, general manager and co-owner.
The magnificent century-old estate vineyards boast 60- to 90-year-old Cariñena and Garnacha vines as well as newer plantings of Garnacha, Cabernet Sauvignon, Merlot and Syrah that add complexity to Vall Llach’s range of widely acclaimed wines. Priorat’s notoriously stingy llicorella (fractured black slate) hillsides produce extremely low yields of intensely flavored grapes.
The Celler makes this wine from grapes from very old vines, some of which are centuries old, belonging to selected farms, owned by farmers who have been collaborating with us since our foundation. From the Cellar, we make a thorough follow-up of each of the production processes. And this collaboration with the farmers, who bring us inherited traditions and customs, allows Celler Vall Llach to identify this wine with the effort and uniqueness of the cultivation of these lands. Chateau de Beaucastel Chateauneuf-du-Pape Rouge is made from 30% each Grenache and Mourvèdre, with 10% each Counoise and Syrah, plus 20% other permitted varieties, including a healthy proportion of white grapes.
The story :
Château de Beaucastel has long been considered one of the great wines of France. It is unanimously renowned for its balance, elegance and ageing potential. Beaucastel has an extraordinary terroir at the Northern end of the appellation with heavy exposure to the Mistral. All 13 varieties of the appellation have been organically grown here since the sixties.
Location :
Châteauneuf du Pape, between Orange and Avignon, Château de Beaucastel red is a 70-hectare vineyard.
Terroir :
Château de Beaucastel is 110 hectares, with one single plot at the north of the appellation. The terroir is archetypal of the best terroirs in Châteauneuf: rolled pebbles on the surface, sand, clay and limestone deeper down. The vines are old and have been organically grown for 50 years, which has allowed the roots to grow exceptionally deep.
Beaucastel grows all thirteen grape varieties authorised by the appellation.
Ageing :
Each variety is harvested manually and separately. Vinification is completed in truncated oak barrels for the reductive grapes (Mourvèdre and Syrah) and in traditional tiled cement tanks for the oxidative grapes (such as Grenache). After the malolactic fermentations, the family blends the different varieties and then the wine ages in oak Foudres for a year before bottling.

deep, quite herbal expression, with liquorice and crushed blueberries to the cassis fruit. Full-bodied, powerfully fruited, dense and deep. Really mouthcoating, intense fruit. The tannins are ripe, fine and plentiful, all saturated in blackberry juice on a long finish. Certainly one of the more successful Châteauneufs this year. Will age well. A Mourvèdre-led expression of Beaucastel - it contains more than usual, at least 35% and probably more. Grenache and Cinsault fermented in cement, Syrah and Mourvèdre fermented in foudre. Vintners Dennis O’Neil and Steph Martin began development of Checkerboard Vineyards in 1999 and retained winemaker Martha McClellan to create a portfolio of wines reflecting the mountainside. The estate includes four vineyard sites of different elevation, exposure and soil composition, providing the foundation for a portfolio that includes Checkerboard Aurora Vineyard, Checkerboard Coyote Ridge Vineyard, Checkerboard Nash Creek Vineyard, Checkerboard Kings Row, Checkerboard Sauvignon Blanc, and Checkerboard Rose. Grapes are harvested at dawn in micro-lots and delivered steps away to the winery where clusters are sorted, discarding any blemished ones. Individual berries are hand-selected for vinification and transferred for fermentation, by hand, to Taransaud wooden tanks, stainless tanks, and individual wooden barrels.
Farming is based on long-term sustainability and includes water conservation and monitoring, permanent cover crops planted in alternating rows, and the use of entomology for pest control and the development of soils with good organic matter and microbiology. Checkerboard Vineyards is a member of Fish Friendly Farming which promotes environmentally-friendly land practices and water quality management. Aurora Vineyard is located in a small valley midway up Diamond Mountain and on a large knoll at an elevation of 1,200 feet. The knoll bulges outward, giving the vineyard full Southern exposure and open light from the East and West and protection from Napa Valley’s summer fog. Six acres are planted in the knoll’s rich, volcanic soils that are riddled with basalt cobble in a loamy red clay. The remaining six acres are planted in a deep gravely mix of volcanic ash and chips of decomposed Rhyolite that were washed down from the steep, rocky crags of Diamond Mountain above.
There's a fresh, sweet aroma to the 2016 Checkerboard Aurora Vineyard that builds excitement and anticipation for what's to come. On approach, the palate is juicy and expansive and explodes with flavors of blackberry, mulberry, dark cherry, caramel, leaf tobacco and green olive. Cholila Ranch Malbec is made from 100% Malbec. The estate-grown grapes are manually harvested, carefully sorted, and destemmed. The wine undergoes traditional maceration for 21 days with selected yeasts. Cholila Ranch Malbec is aged both in American and French oak for 9 months, followed by a minimum of 6 months bottle aging prior to release.

The 2019 Yettalil opens with aromas of fresh blackberry, ripe plum, and racy cassis layered with hints of violet, bay leaf, and thyme. Beautifully balanced and elegant on the palate, vibrant acidity and polished tannins give way to a concentrated core of black cherry, vanilla, and cedar. Jubilation is our newest wine in the Colgin Cellars collection. Jubilation is our Cabernet Sauvignon-based wine created with a selection of barrels that display earlier drinking characteristics from our three hillside vineyards. As our vine age has matured and small additions have been made to our original holdings, we had the privilege of increasing our selectivity. Following the blending of our single-vineyard wines, we were fortunate to have a collection of barrels that conveyed the same elegance and complexity for which we are known, yet on a more supple, approachable frame. Jubilation is a wine ready to enjoy now, with the pedigree to age gracefully in the cellar, maintaining the Colgin Cellars’ hallmarks of perfume, freshness, and minerality. The inaugural bottling of Jubilation from the 2016 vintage was released in late 2020. Future vintages are destined for select members of the fine wine trade.
Colmant Brut Chardonnay is made from 100 percent Chardonnay (Franschhoek and Robertson).
15% of the base wine has been barrel fermented.
Ageing: This wine spends a minimum of 45 months on the lees at a consistent temperature of 14C before degorgement.
Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time.
Drinking tips: Ideal with pan fried scallops or line fish "au beurre blanc", it is also the oyster's best friend and will enhance the flavors of parmesan, asparagus, artichokes, parma ham,…

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. The wine is thoughtful and focused, and the finish leaves my mouth watering; there is serious acidity here, and they are doing it right. Colmant is the little guy doing some really great things— quietly focused wines, with serious aging potential. Keep this small producer on your radar. Blend: Colmant Brut Reserve NV is a blend of Pinot Noir 52%, Chardonnay 48% (Franschhoek, Robertson, Elgin, Somerset-West and Stellenbosch). 10% of the blend is made of reserve wine from the previous vintage and 12% of the base wine is barrel fermented.
Ageing: 28 months minimum on the lees at steady 13°C temperature.
Tasting: A subtle pale gold color with a very clean and elegant nose. The aroma has a gentle spicy toastiness with a lemon / yeasty perfume followed by more mature fruit. Plenty of freshness on the palate, with a good acidity which perfectly balances the yeasty depth, bready flavors and ample structure. Long smooth finish. Will develop nicely over the years.

"Disgorged February 2011, the Non-vintage Brut Reserve is a blend of 52% Pinot Noir and 48% Chardonnay based on the 2008 vintages blended with reserve wines from 2007 and 2006 (25% of the blend), aged for 30 months on the lees. It has a very fine pettillance in the glass. The nose is very well defined with crushed stone, oyster shell and the subtle perfume of fine lees coming through with aeration. The palate is very crisp and lively on the entry with vibrant acidity, a citrus thread from start to finish, and though it is not a powerful Cap Classique, it is wonderfully poised with great persistence on the fresh lime and Granny Smith-tinged finish.

It was day 6 in South Africa and we find ourselves outside of beautiful Cape Town, in the country near the Riebeek Kasteel area in Swartland. Let's talk a little about my accommodations before I tell you about this amazing bubbly. We arrive at the one and only hotel in Riebeek to find out that there were not enough rooms open for all.
We reached out to our contact at Riebeek cellars, who we will refer to as "Point Break" from now on. For those of you that have not seen the movie Point Break, this guy looked and sounded like a blonde Keanu Reeves with a Dutch accent. Anyway, Point Break tells me that they have secured a small bed and breakfast that we could use for the overflow. Sounded nice...so I opted for it.
Upon arrival, the home was beautiful on the outside with a catchy French name, "Shades of Provence". After Point Break fiddled with the skeleton key and lock for a good 35 minutes in the rain, we finally get to see the inside of our new home. The door opened straight into the kitchen where the first thing I noticed was the mouse sh*t all over the place. It was winter there and the mice were trying to stay warm, I'm sure. Little did they know this damn place had no heat.
Besides myself and my fiancee Sylvia, there were 3 other people and a total of four rooms. At this point I knew I better drag both our suitcases up those steps and get to the best room before everyone else. At stroke-causing speed, I skipped up the steps nearly knocking Point Break on his back and went through the rooms. I settled for a nice corner room with the least amount of dirt on the concrete floor and with only one or two spider webs on the wrought iron bed post.
For dinner that night, we returned to the hotel restaurant to join the rest of our group. The 5 of us forced to stay in the bed and breakfast were in a far worse mood than everyone around us. Arriving late, we sat at the end of the dinning table and hoarded as much wine as possible to try and drink ourselves to a point where we could sleep in that disgrace of a French country side home that Point Break secured for us.
That night, I slept with the lights on, all my clothes on, and on top of the sheets hoping to avoid spider bites. I awoke that morning to Sylvia standing over me holding what looked like a hot water knob off of the shower. "It wasn't even attached.", she said. Sylvia proceeds to take a "whore-bath" in the sink using her own packed sock as a wash cloth. It was the only thing she deemed clean. To top it off, in a brief moment of happiness she finds a hair dryer in a cabinet. She pulled it out in triumph only to realize that there was a used condom stuck to the side of it. Obviously, this is her last trip to South Africa.
Deep cherry red in color with a garnet rim. On the nose, it is intense and elegant, with a base of ripe fruits that blends with the subtle tertiary aromas of sweet spices and cocoa. On the palate, it is balanced, full-bodied but with sweet and pleasant tannins, with a long and very persistent aftertaste.

Fruit aroma of blackberry, mulberry and boysenberry, interlaced with a spicy oak note. As the wine ages in the bottle the oak and fruit aromas will meld into a complex medley of cedar and cigar box. Rich blackberry and a hint of wild sage normally found. Pleasant acidity and a rich, balanced mouthfeel followed by a well-developed mid palate. The result is a tannin structure that is evident but seamless. The finish is smooth and lingering.

Blended with 7% Merlot and 7% Syrah, the 2019 Cabernet Sauvignon Red Mountain starts with a bold, generous and dark-fruited nose with a rich and robust expression that boasts a seductive oaky essence. Full-bodied, the palate is still tight and will benefit from additional aging in bottle, yet I can see it has good bones now that will allow it to age gracefully for about two decades. Gobs of dark red and black fruits sway with a delightful mineral tension before concluding with a long, winding and spicy finish. The wine rested for 20 months in all new French oak before being bottled and left to rest for more than a year prior to release.
