Corinne Perchaud Chablis is 100 percent Chardonnay.

A classic Chablis with aromas of ripe white fruits and a taste of rich minerals.

The Vineyards The plots are in Chablis located predominantly on the village of Fleys, but also on the common Chichée and Fontenay, their total area is 13 hectares. They are mostly north and north-west oriented. The ground floor is Kimmeridgian marl consisting clay and limestone. The oldest of of the vines is 35 years. Winemaking After a slight settling, the juice is put in stainless tanks to achieve its fermentation both alcoholic and malolactic. Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration method friendly to the wine. The wine is bottles between 14 and 21 months after the harvest.  

Pairs well with Oysters or shellfish and Sole Meunière.

July and early August, rainy and stormy brought the water needed vineyards. The dry and sunny weather of the second half of August brought the grape good maturity. The harvest began on September 2 under clement skies.

Corinne Perchaud Chablis 1er Cru Fourchaume is made from 100 percent Chardonnay

Elegant citrus aromas. Concentrated and finessed, combining flavors of dried fruit with slight hints of woody notes. Perfect balance between body and acidity, long and persistent finish. This one is drinking great now, but as with all exceptional Chablis, it is possible to pay it down for years to come.

Made from 35 year old vines. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. The grapes are harvested by hand and gently pressed in a horizontal pressoir to ensure the fullest extraction and range of flavors and aromas.

Pair with Scallops Jacques cream, roast veal with oyster mushrooms.

Perchaud Chablis Premier Cru Fourneaux is made from 100 percent Chardonnay.

This is the south facing portion of the slope and very hot, heavy "Fourneaux" or "oven" effect.
The wine is expressive and vivacious with beautiful aromas.
Well-balanced, round and fruity wine with a fine minerality on the finish.

1er Cru Fourneaux is located on the Fleys village and faces the field. the plots are very steep and exposed full south on soil type Kimmeridgian consists of marl clay-limestone with shallow ground and a very stony ground. After a slight settling, the juice starts its fermentation in tank, then ¼ of juice is racked in barrels. Both wines perform their alcoholic fermentation and malolactic and their aging on the lees, separately. The two cuvées are blended six months after harvesting. Corinne Perchaud Chablis Premier Cru Vaucoupin is 100 percent Chardonnay. 

The vineyard The plots are on the Vaucoupin Chichée village. They are very steep and facing south, their average age is 40 years. The total area is 1.45 hectares. The vines are planted on soil Kimmeridgian marl consisting clay and limestone with dominant clay. Winemaking After a slight settling, the juice is put in to achieve its fermentation tank alcoholic and malolactic. It follows a long aging on lees to bring a maximum of complexity of aromas and flavors. If necessary, we make a collage to bentonite to remove proteins and a passing cold which eliminates tartar crystals. Then we perform a tangential filtration is the filtration method most friendly to wine.

The wine will be bottled 16 months after harvest. The relatively high temperatures at the end of winter allowed an early bud vines in early March. With a hot, dry spring flower took place in good conditions. In July, a hailstorm located did some damage to our Fourchaume plot. July and early August, rainy and stormy brought the water needed for the vineyards. The dry and sunny weather of the second half of August brought the grapes to maturity. Cueva de las Manos Cabernet Sauvignon Organic is made from 100 percent Malbec.

Cueva de las Manos translates to "Cave of Hands". There are a series of caves in Patagonia containing stenciled paintings of hands, dating back over 9,000 years ago. The caves have been named a World Heritage Site, and they are the inspiration for the label on these wines.

The wine offers an intense bouquet on the nose, with notes of green pepper. On the palate it is smooth and well-textured with a long and elegant finish.

Cueva de las Manos Malbec is deep purple in color. Fruity intensity on the nose with floral notes. A juicy texture, mild tannins and good structure balanced by a well-integrated freshness. Clean and pure finish.

Maurice Ecard Savigny Beaune 1er Cru Narbantons is made from 100 percent Pinot Noir

Reduced yields from severe springtime pruning, fully mature harvest and manual selection and sorting.  Vinification involves partial destemming, classic fermentation, pigeage, racking of the gross lees.

The wine offers black cherry fruits on the nose. Rich and full bodied with a beautiful texture. Flavorful.

Evening Land Seven Springs Vineyard Summum Chardonnay is made from 100 percent Chardonnay. 

Summum Chardonnay is the unofficial tête de cuvée of our lineup at Evening Land Vineyards. Fruit for Summum comes from just 14 vine rows that form the backbone of the Seven Springs Estate. Here, soils were formed by ancient volcanic eruptions that sent blazing lava down the current vineyard’s slopes – and today, we’re lucky enough to farm our vines in these mineral-laden soils. The 2019 Summum Chardonnay is medium-bodied and bright, marked by flavors of lemon skin, baked apple, and a touch of sweet spice that leads to a satiny, harmonious finish. Fefinanes Albarino de 1583 Albarino is made from 100% Albarino.
Aged for 5 months in oak barrels (a combination of fine-grained American and French Allier barrels).
1583 is the birth date of the Viscount of Fefinanes, Gonzalo Sarmiento Valladares, builder of the Castle of Fefinanes, in Cambados.

They wanted to pay tribute to their ancestor with this wine that managed to reach a perfect harmony between the fruitiness of the Albarino grape and the complexity brought by the oak aging.

Lovely straw yellow color, clean and bright. The nose is reminiscent of ripe crystallized fruit and spices. The palate is elegant, round and well balanced, with a silky texture.

Excellent with shellfish, grilled or stewed fish, white meats, poultry.

Owner Juan Gil comments that the wine really starts to come into its own in June/July, and he actually prefers it 18 or more months after it's made. The Cuvee Especial is a Graciano and Syrah blend aged in oak barrels that produces a full-bodied, fresh wine of great complexity and long lasting finish.

Finca La Pared Graciano is made from 100 percent Graciano. 

Finca La Pared Graciano is a powerful graciano that is perfectly integrated with the oak. It shows remarkable notes of fresh spices and dark fruit. Reserved, serene, deep black. Restrained feel.

Finca La Pared Syrah is made from 100 percent Syrah. 

Finca La Pared Syrah shows an expressive nose of dark fruit aromas and a mineral character.

Just south of the winery, Bacigalupi Vineyard straddles Westside Road in the upper reach of Russian River Valley. The 125 acre vineyard encompasses a range of terroir, from heavier valley floor soil along the Russian River to alluvial clay loam on the rolling hillsides. The fruit is sourced from a superb block of 25 year-old Wente Clone vines located on the western slope of the site. Bacigalupi was the source of the Chateau Montelena Chardonnay that, famously, beat the French wines at the "Judgement of Paris" in 1976.

Bacigalupi Chardonnay has a nose of lemon zest and vanilla bean. The palate opens with red pear and Meyer lemon, and brioche toast and honey comb notes on the finish. Like well-made Chardonnay from great vineyards around the world this wine benefits from getting some air, will age for years, and is best when served chilled around 50 degrees. This wine will evolve in the bottle for many years to come. A terrific wine from one of Sonoma County's top sites for Chardonnay.
