The 2021 Shafer Hillside Select is crafted exclusively from grapes grown on Shafer's rugged hillside vineyards, where steep, rocky soils push the vines to produce low yields of intensely concentrated fruit. The unique terroir, combined with Napa Valley's hallmark climate of warm, sunny days and cool nights, contributed to a vintage with exceptional structure, lush tannins, and deep, vibrant color. The 2021 growing season exemplified these conditions, allowing the grapes to mature beautifully by early September, resulting in a wine with refined, pure aromas and flavors that reflect the richness and elegance of the vineyard.

“Such a beautifully balanced wine with tremendous staying power and expressive Stags Leap ironstone minerality with heady sagebrush and conifer notes with white pepper and walnut husk. The wine has an impressive depth of red-toned fruit on the mid-palate framed by tannins that practically dance across the palate, exuding length, tension, and power. Tanzanite Brut Rose Method Cap Classique is made from 60% Pinot Noir and 40% Chardonnay.

It begins with a sumptuous and luminous pink appearance. Followed by a delicacy of red fruit aromas. The nose is generous and elegant. Fresh attack followed by a harmonious sensation on the palate. Perfectly balanced in the best Tanzanite Style which combines elegance and flair.

Yearly the grapes are sourced from Robertson. Hand picking of the grapes we do in small 18kg lots and then whole bunch pressing on every 5 Ton of grapes. Yields are around 450-480 liters per ton of grapes. Juice was inoculated with Prise de Mousse yeast for primary fermentation at cool temperatures for 8-10 days. This is followed by Malolactic fermentation on all base wines. The MLF ads depth and complexity to the base wines. With maturation the wine will get soft, creamy and elegant. Secondary fermentation took place in the bottle and wines were left on the lees and tasted every few months to monitor the ageing on the lees. Minimum time spent on the lees 24 months.

It’s the only area in the Western Cape where you will find Chalk in our soil.
The wine is made from selected vineyards. Limited to 6 000 bottles annually.
Age of the vines is around 10-15 years old.

Pairs well with roasted white meat, game, tapas, ham and smoked salmon.

The House of Trouillard has incredible holdings on the Côtes de Blancs. The vineyard's rating average 94-95, just one of the reasons the Blanc de Blancs has such incredible raciness and elegance. It is a Cuvée of eleven different Crus in the Reims Mountain, the Côtes de Blancs and the Sézannaise region and is the specialty of the house.

Trouillard Blanc de Blancs Brut NV is made of 100% Chardonnay with a green-gold color, characteristic of Chardonnay, and with fine persistent bubbles. This wine has an aroma that jumps out of the glass and is very inviting. On the nose there are seductive scents of warm almond croissant and honey, lightened by some floral notes. Crisp and refreshing in the mouth and lively with a very refined fruitiness and a touch of smokiness typical of wines from the Côtes des Blancs. The elegance and subtlety of the Chardonnay are to be especially appreciated as an aperitif, and nicely accompanies shellfish and fish. 
It has become the favorite of those who know Champagne Trouillard.

Trouillard Blanc de Noir Extra Brut NV is made from 90% Pinot Noir and 10% Pinot Meunier.

Aged "sur lattes" for 2 years

Color: Golden, fine bubbles.
Nose: Deep, vinous with red berries notes
Mouth: Ample. Sugar dosage gives it wilderness. You will be seduced by its stout, its structure and its vinosity. You will be invaded by a sensation of freshness.

This sparkling wine is only vinified with white juice of black grapes hence its name "Blanc de Noirs", which litterally translate to "White from Black". The exact varietal breakdown is 90% Pinot Noir and 10% Pinot Meunier.
It is aged sur lattes, in the bottle, on the lees for 24 months minimum.
Its low sugar dosage makes it an extra dry.

Its full bodied and power features designate it to go with sweetbread, giblet, “bouchée à la reine” and whites meats

"Light yellow-bronze hue. Showing toasty lees aromas and a bright, energetic attack, the Blanc de Noirs Extra Brut offers good balance and complexity in a Champagne meant to be consumed with food. Trouillard Elexium Rose Brut NV rosé cuvée is made with 100% Pinot Noir grapes and aged for 3 years on the lees. The color is a seductive salmon pink with fine bubbles. The Pinot Noir gives this fruity wine its rich bouquet of raspberries and fresh-baked bread. On the palate it is rich yet balanced with lashings of red-berry fruitiness and an ephemeral creaminess. An enormously popular and versatile rosé, this wine is perfect with roast game birds or fowl, smoked salmon and creamy cheeses.

Wolfberger Alsace Grand Cru Riesling Rangen de Thann is made from 100 percent Riesling. 

 Mineral, spicy, minty with some eucalyptus notes, tropical fruits, grapefruit. Balanced and exotic in the finish, with long lasting flavors.

The Rangen Grand Cru is located in Thann, deep in the south of Alsace. Its particular soil is made of volcano-clastic rocks that drink up the heat of the day and send it back out again at night. The composition of the soil allows the roots of the vines to drink deeply from the mineral-rich sub-soil. Its southern exposure has the advantage of refreshing, drying winds in case of dampness. The high slopes are quite steep, reaching 68% in some places, requiring that the harvest be done by abseiling or roping down. Perfect for aging, these wines will reveal even more qualities after several years in the cellar.

Pair with Serve with fish, seafood, sushi, sashimi, goat cheese, vegetarian food.

Brize Loire Renaissance Anjou Blanc is made from 100% Chenin Blanc.

Anjou Blanc Renaissance was entirely fermented and aged in French oak barrels. The wine is dry and powerful with an intense bouquet of apricot, vanilla and honey.

Excellent when paired with lobster or white fish with a creamy sauce.

Crabitey Graves Rouge is made from 47% Cabernet Sauvignon, 47% Merlot and 6% Petit Verdot.

Château Crabitey Graves Rouge presents a dark cherry color with nice ruby glints. The nose is fresh, revealing a wide range of red fruits flavors, along with a mellow and elegant oak presence. The mouth is powerful and round, supported by smooth and subtle tannins. The wine reveals a good length on the palate, with fruity and slightly oaky notes.

Pairs well is grilled lamb, beef stroganoff and hard cheeses.

This new-wave Rioja (see below for info) is a blend of Tempranillo, Graciano and Garnacha. It combines maturity and complexity with freshness and elegance. Theres a core of dark plummy fruit, with some cherry notes, spice and earthiness and lovely ripe tannins giving complexity and body.

This is perfect with grilled lamb chops and salsa verde

 Rioja has traditionally been defined by its ageing. Wines would be blended from across the region and quality would be defined by a wines age - vineyards and regionality were not considered important. Now, theres a new movement in Rioja where new wave producers are pushing to label the wines from their villages and regions highlighting the difference in the terroir and individual parcels.

Creaciones Exeo is part of this movement , stepping away from traditional methods, to produce fresher styles of wine with a lesser reliance an oak influence. The important thing here is hard work in the vineyard to produce great fruit.

Located in the area of Labastida, Rioja Alavesa (this village is labelled on the bottle, until very recently producers were not allowed to do this), Carlos works with 24 hectares of the highest altitude vineyards of the area. In the shelter of the Sierra Toloo, the vines benefit from Atlantic influences and the soils here are mainly chalk and limestone which all help to give elegance the wine.

Aromatically the wine lifts from the glass with a combination of perfectly ripened red and black fruits, with a graphite smokiness and a hint of mulling spices. On the palate, their is a youthful tannic structure and a floral flavors alongside the fruity notes. 

Spicy cologne lifts from the 2021 Pinot Noir Paul Gerrie Vineyard, with both high-toned and darker notes of sage, menthol, bergamot, and cranberry cocktail. Medium to full-bodied, it’s tightly coiled, with tremendous length, gripping ripe tannins, a bright spine of acidity, and mouthwatering salinity that lasts long on the finish. It offers up great mineral texture and will need 3-5 more years in bottle.
