Sauternes region of France, just slightly South of Bordeaux, which is most recognized for producing superior sweet wines. Sauternes cultivates and produces the most famous and premium dessert wines. Grapes grown in Sauternes are mainly Semillon, but one can also find small amounts of Sauvignon Blanc, Muscadelle, and Sauvignon Gris. Semillon allows for a full bodied structure with notes of stone fruit, honeysuckle, and beeswax in Sauternes wine, while the Sauvignon Blanc gives earthy tones to the nose and valuable acidity for freshness. Traditional wines from Sauternes are a rich deep yellow color and increases to a rich tawny when aged in the bottle. Sauternes winemakers have a particularly interesting method of producing such fantastic dessert wines, botrytis. Under ideal circumstances, the grapes will be subjected to “noble rot” where the fungus dries out the grape and naturally concentrates the grape’s sugar content. Sauternes climate of dewy early daytime effects combined with temperate and arid afternoons gives the best environment for botrytis to form. Appellation laws in Sauternes regulate the harvesting of the grapes when they reach a weight of 221 grams per liter. Sauternes carry a very high risk in production due to the longer periods on the vine, allowing fungus to form, and lengthy time in a barrel. Good vintages that rely on nothing but nature for the sweetness and flavor are extremely prestigious and often come with a higher price tag.
Hallet Sauternes is made from 100% Sémillon.
With delicate aromas of honey, citrus, crystallized fruit and acacia, it makes a good match not only for desserts, but also for foie gras, roasted meats and blue cheeses.
It makes a delicious aperitif when served chilled.
Gravas Sauternes is a blend of 100% Sémillon.
The wine shows a lovely pale golden color with deep golden highlights. Round and well-balanced offering complex aromas of candied fruits backed up by a hint of exotic fruit (mango, guava) and white flowers. On the palate, it is ample and fleshy, leading into a silky and long finish.
The wine pairs well with white meats, scallops, exotic and spicy dishes, foie Gras, Roquefort blue cheese, chocolate desserts.

The 2018 Cabernet Sauvignon Spring Mountain District is a monster of a mountain Cabernet that has a primordial bouquet of blackcurrants, smoked earth, chocolate, and graphite. While Spring Mountain wines tend to be more aromatic and complex right out of the gate, that’s not the case here, and this is going to need bottle age to round into form. Full-bodied on the palate, with a rich, concentrated mouthfeel, it has serious tannins, notable purity of fruit, and a great finish. With air, it picks up more and more classic Spring Mountain floral and exotic notes, and it’s flawlessly balanced, with gorgeous tannins and a great, great finish. This is a brilliant wine in the lineup and unquestionably one of the true gems from Spring Mountain in 2018. Give bottles 4-5 years and enjoy over the following 2-3 decades.

Nicolas-Jay 'l'Ensemble' Pinot Noir Willamette Valley is made from 100 percent Pinot Noir.
Winemaker Tasting Notes | A bright, magenta color with pinkish red edges shows intensity, youthfulness and concentration. Aroma sequences immediately leap from the glass with freshness and vigor. There are red berries, freshly cut straw, rhubarb and elegantly perfumed red flowers. A blood orange zest intermixes with Herbes de Provence, cranberries and tight-grained French barrique. The structure of the wine is medium + at first, but as the wine unfolds in the mid-palate it begins to tighten and constrict. Acid levels are earnest in this wine, but there is a broad density that seems to take a combative stance to its brightness as the finish expands into chalky minerality, tangerine spice and an underlayment of crushed river rock. It's silky, pretty and elegant, but with a grit and willpower that suggests an exquisite vintage made by an experience and sensitive winemaking approach.
Vintage | The beautiful 2021 vintage began with a warm dry winter followed by a wet and cool late Spring. Despite rain during bloom, yields were high and the vines soaked up the nourishing moisture early in the season. June also brought a heat dome with temperatures breaking 115 degrees in the Willamette Valley. Luckily, this unprecedented heat came at a time before the grapes were susceptible to damage and the growing season continued warm but without issue. A cooler August was a sigh of relief as we neared harvest. Grape ripening slowed down and the very healthy and abundant fruit began showing signs of ripeness in early September. We began picking on September 4th with 2 separate chardonnay vineyards and finished on September 27th with our latest and highest elevation chardonnay site – Spirit Hill. Harvest was beautiful and dry with only one small rain event toward the end, ideal for a successful vintage. The fruit was pristine and yields comfortable, leading to moderate alcohol levels and bright acidity. Our first vintage made entirely here at the Nicolas-Jay estate, the wines are showing purity of fruit, beautiful texture and tension and are sure to continue to evolve for years in bottle.
Review:
A jeweled ruby hue, the 2021 Pinot Noir L'Ensemble needs a little time to open in the glass before revealing aromas of fresh pine, ripe cherry liqueur, and toasted spice. Supple and medium to full-bodied, with ripe tannins, it delivers elegant freshness and wonderful purity through its long, mouthwatering, seamless finish. Drink 2025-2037.
