Red, Rose and White Wines from Sancerre
Sancerre is a region located in the eastern part of France. It is one of Loire valley where grapes grown and wine are produced. The region has cool climate and chalky soils. Until the late 19th century, Pinot Noir grape is the main grape product in Sancerre. Red wine from Pinot Noir grape is commonly produced.
In the late 19th century, killer bugs plagued the vineyards. These bugs were known to inject their poisonous saliva in grapevines that intended to kill the grapes and devastate the vineyards. The vineyard crisis was called phylloxera. After the devastation, locals replanted grapes in the form of Sauvignon Blanc.
Sauvignon Blanc became the ideal choice of grapes as it works well with Sancerre’s cool climate. The grape grew popular and white wine is produced thereafter. Now, Sancerre produces red and rose wine from Pinot Noir and white wine from Sauvignon Blanc.
Bihan Le Sancerre Blanc 2023 is made from 100 percent Sauvignon Blanc.
Pale, lemon green color, with pronounced citrus intensity. The nose is dominated by lychee, grapefruit and peach aromas; rich and well-rounded in the mouth, showing a pleasant acidity length.
Traditional, in stainless steel tanks. Bladder press grape pressing and reception of the must in the tanks by gravity. Settling of the must 24-36 hours before fermentation. Slow alcoholic fermentation only is done, in order to preserve the aromatic qualities. A racking is done over 3 months later. Clarification and light filtration before bottling at the estate.
To drink as an Aperitif or with food, such as white meat, seafood, crottin de Chavignol goat cheese.

Single vineyard. Vinification: cold fermentation in stainless steel tank, no oak, no malolactic fermentation.

According to the Sancerre AOC regulation, maximum yield authorized for the rosé is 55 hl/ha.

The wine is spicy and juicy with cherry aromas, and proves the point that power is not necessary for a fine wine.
Super-concentrated and mineral. Release always trails the regular Sancerre Blanc by a year so it has extra time in both tank and bottle.
An understated charm on the nose, revealing elegant aromas of yellow fruits like apricot and mirabelle plum, along with hints of anise and marzipan. A touch of green pepper adds a light and airy quality. On the palate, it offers a crisp and delightful experience, with flavors of plum and orange wedge, culminating in a chalky, saline finish.
VINEYARDS: The vineyards are planted in Terroir of Kimmeridgian marls (calcareous clay with encrustation of oyster and mussel fossils) from the Jurassic time. Trellised vines are averaged around 30 years old and have a planting density of 8000 vines/ha. Tillage takes place in the rows until the bud burst, the rest of the year to natural grass covers. The Côte des Monts Damnés is located in Chavignol. Steep hillsides (declivity up to 70%), facing south, with an altitude that ranges from 650 to 980 feet.
VINTAGE: The grapes matured in cooler temperatures than in recent years, so the 2021 vintage is in line with other vintages that conform to the temperate climate of the Centre-Loire wine region.
VINIFICATION AND MATURATION: The grapes were handpicked and had a light cold static settling to eliminate the coarsest lees. Fermentation and aging took place in stainless steel tanks (88%) and 10 years old wooden vats (12%). After, the wine was aged on fine fermentation lees for 9 months.
Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.
Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.
The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. This wine come from the hardest stone soil on the vineyard giving it pleasant notes of fruit and a very dry flavor: This wine is bottled using traditional methods without filtration, allowing for a authentic and natural taste to the wine.

This is a very versatile wine. You can have it on its own in the summer time as an apéritif. But it is also excellent with Hors d'Oeuvres and terrines. It will compliment any white meat dish and poultry. You can also enjoy it with salmon or exotic food (slightly spicy sushi).

Luis XIV Fondillon Oro 50 years NV is made from 100 percent 100% Monastrell (Mourvedre). Only 24 9 liter cases produced.
The wine is produced in the village of Cañada, in the subarea of Alto Vinalopó in the province of Alicante. Made from 100% Monastrell planted on traditional dry land as bush vines, at 550-580 meters above sea leval and enjoying a Mediterranean climate with great marine influence due to the easterly winds.
Fondillon 50 years is mahogany in color with orange tile rim, medium layer and great density. On the nose, it has a very deep aroma of old wood, black tea and carob. In the mouth, it has a sweet entry balanced by a rich high acidity. Its aromas are long, almost eternal and very intense. It tastes like old mahogany, a very old barrel and bygone times.
Bottled in December 2019.

"The NV Fondillón Luis XIV has the subtitle Edad Superior a 50 años (over 50 years old), and it's a dark mahogany, bottled from a single barrel that has the specific profile of a very old wine greatly concentrated by age, which tends to make it similar to other very old and concentrated wines, be it a Mediterranean rancio or a very old Moscatel. It has notes of bitter chocolate, coconut and iodine, carob beans (algarroba) and some bittersweet sensations. It's dense and concentrated, and the palate is pungent, with very intense flavors and a bitter twist in the finish. This has 16.3% alcohol, 6.45 grams of acidity and 34 grams of sugar, but it comes through as very dry. The wine is long and extraordinary, but it just doesn't have any Fondillón character after decades of concentration by evaporation. The price is ludicrous. "Fondillón is an extraordinary treasure of Alicante, a rare product, made from late harvest, non-botrytised grapes, unfortified, but with a final alcohol of no less than 16%. Intense, aged, but not sweet (deliciously not more than 45g/l). Fab with cheese or dark chocolate. The wines have to be a minimum of 10 years; this release is more than 25 years. This wine is floral, exuberant, with lengthy smooth tannins, and metallic notes.
This cuvée takes its name from a small parcel of the Adrianna Vineyard that is completely covered with oval white stones and was the site of an ancient riverbed. The abundant stones provide optimal drainage and extreme temperatures. They absorb heat and moderate the nights, but also function like ice cubes after a very cold night. Stony soil Malbecs tend to be extremely aromatic, rich and luxurious, just like the River Malbec from Adrianna. This wine can be enjoyed young or aged for decades.
Pair with grilled meats.
Review:
Wild blackberries, pine cones, bark, chili chocolate, cracked pepper, cloves, iodine and crushed stones on the nose. Full-bodied with firm, creamy tannins. Lovely coolness and minerality to the dark fruit. Powerful, too. Try in 2026.
