Robert Mondavi Winery Cabernet Sauvignon is made from 91% Cabernet Sauvignon, 5% Petit Verdot, 3% Cabernet Franc, 1% Malbec.
The 2021 Robert Mondavi Napa Valley Cabernet Sauvignon shows notes of plum, blackberry, licorice, chocolate, violet, and warm spice. Dark plum and black fruit carry through to the palate. Fresh and lively with plush tannins and a polished structure.

Soft around the edges and firm in the middle, this red- and black-fruited wine has a creaminess on the palate, delivering a mix of red cherries, blackberries and blueberries wrapped in moderate tannins. Contains small amounts of petit verdot, cabernet franc, malbec and merlot.

He chose To Kalon Vineyard in the heart of the Napa Valley as the home for Robert Mondavi Winery. "A blend of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette, the 2022 Tavel La Reine des Bois is a touch darker in hue than its stablemate, the La Dame Rousse, but it's still not among the darkest of Tavels in the glass. That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.
A small release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet.
DAOU Vineyards Reserve Cabernet Sauvignon is made from 77% Cabernet Sauvignon, 23% Petit Verdot.
The 2021 DAOU Reserve Cabernet Sauvignon is emblematic of Paso Robles as a world-class region for Bordeaux-style wines. The 2021 My Favorite Neighbor Cabernet Sauvignon fills the glass with a seamless culmination of black cherry, cassis and warm spice. Considering that this blend of 83% Cabernet Sauvignon with 7% each of Petit Verdot and Malbec (along with bits of Petite Sirah and Syrah) was sourced from Paso Robles but bottled in Napa, the "Neighbor" part of this wine's name makes sense-and tasting it explains the "Favorite" part. It's very flavorful, with notes of black cherry and cassis and an acid structure that's ready to rip, making it just perfect for restaurants.

Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot .
Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.
Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. Mon Chevalier features the interaction of the loamy, well drained and rocky volcanic soil, the typical sunny mountain climate and the low-interventionistic Morlet winemaking approach.

The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

Moving to the top releases, the 2016 Cabernet Sauvignon Mon Chevalier comes from Knights Valley and was brought up in puncheons. A gorgeous bouquet of sandalwood, violets, loamy earth, and incense as well as some iron-laced black and blue fruits flow to a rounded, supple, incredibly textured Cabernet that has sweet tannins, a stacked mid-palate, and a great finish. It’s already terrific yet will keep for 20-25 years or more.

Rubus Chardonnay Colchagua Valley is made from 100 percent Chardonnay.
Attractive yellow color with some green tones. Its intense varietal character reminds one ripe fruits like pineapple, with notes of melon and honey well harmonized with oak. In the mouth it is full, rich and buttery.
Grapes are harvested in the morning in order to avoid high temperatures.
At the winery, the grapes are gently pressed.
Alcoholic fermentation is held between 15º and 16º Celsius.
Then, 25% of the wine goes into American Oak barrels for 3 months.
After this, the blend is made, clarified, cold stabilized and filtered. Right before bottling, the wine goes through an on-line filtration system (plate and sterile membrane) to ensure microbiological stability
As far as the food pairing, it is delicious with pasta, fish, seafood and mild cheeses. It is also delicious on its own as an aperitif.
