The Opus One 2018 offers profuse aromas of blackberry, cassis, and black cherry. Elegant notes of violets, white pepper and rose petals follow and together they deliver a very seductive bouquet. The seamlessly layered flavors build to a crescendo of fresh and juicy black-fruit, accented with hints of orange zest, licorice and dark chocolate. The first time specific blocks have been used for this wine. Dark forest berry notes on the nose with perfumed elements and notes of milk chocolate. Supple and agile, generous with textured, slightly grainy tannins that are so pleasant - expansive and round in the mouth. It's well built and very approachable with blackcurrant and black cherry flavours on the palate. Concentrated, deep and layered but still with elegance. Extremely characterful. A blend of the 2018 and 2019 vintages with 18 months ageing in French oak barrels. 1% Petit Verdot completes the blend.

The Eight Years in the Desert pours a dark mauve core with a red amethyst rim and aromatic notes of ripe blackberry and raspberry bramble. Orin Swift Abstract Red is made from  Grenache, Petite Sirah and Syrah.

The 2022 Abstract pours a dark purple core with a neon, ruby rim. The nose is quintessential Abstract but with a broodier twist-notes of ripe black plum, cacao, black pepper, cedar, dried porcini, forest floor musk and sweet oak. The entry is coating and flooding with hints of blueberry preserves, tarragon, balsamic glaze and anise. Bright and lifting through the palate, the finish offers an umami note akin to eggplant yakitori.

Ormes de Pez Saint Estephe  is made from 54% Merlot, 38% Cabernet Sauvignon, 4% Cabernet Franc and 4% Petit Verdot.

Château Ormes de Pez 2020 displays deep garnet-purple color with notes of plum preserves and dark berries, plus hints of graphite. Nice chewiness to the texture and lovely freshness, finishing on a lingering fragrant-earth note.

Ossian Quintaluna Verdejo is made from 100% Verdejo

Quintaluna is a young wine that is made exclusively from Verdejo in the province of Segovia. 60% is very old grape: pre-phylloxera (ungrafted). 40% is made of very young grapes on trellises, grown certified organic, with low yields. The key to success for the Verdejo grape is held in the soil. Ideal soil has a high content of sand and pebbles of different sizes. Some have higher proportions of clay and others have significant proportions of clay and limestone. As the pebbles and sand allow for good drainage, the clay holds enough moisture to allow the vines to thrive.

The color is a straw yellow with greenish reflections. On the nose, you will find aromas of white flowers, stone fruit (peach), and citrus (lemon, mandarin). It also displays tropical fruit aromas. The palate is complex. Natural acidity is evident in the freshness and length on the palate. Almond and ripe fruit flavors are found in the mid-palate with fresh grass and citrus on the finish.

It pairs wells with all kinds of appetizers, entrees and salads.

"The 2020 Quintaluna is pure Verdejo from small plots on sandy soils in the province of Segovia, fermented in stainless steel with indigenous yeasts. They still use grapes from external suppliers but are working toward using 100% their own grapes (which they might achieve in 2023); therefore, the wine is not certified organic, because some of the vineyards from the growers are not certified. It has a balsamic nose reminiscent of bay leaf, dried yellow flowers, chamomile and pollen intermixed with pit fruit. Ripa Della Volta Amarone della Valpolicella  70% Corvina, 20% Corvinone, 5% Oseleta and 5% Spigamonte.

The vineyards are located at an elevation of 300-600 metres above sea level, with a south-southwesterly exposure. Training system: Guyot.

It features an intense red color with garnet highlights. The nose offers up a rich variety of aromas with fruity notes of cherries, morello cherries and plums, spices and hints of chocolate. It is round and caressing with soft, mellow tannins balanced by excellent acidity that enhances its drinkability and ageing potential.

It is a wine with a marked personality, great finesse, elegance, and extraordinary longevity. 

It pairs well with main dishes such as game and roasts, but also cured meats and mature cheese.

Strong, dark ruby ​​with a light garnet edge. Intense and very clearly defined nose with notes of ripe plums, dark forest raspberries and some tobacco in the background. Round on the palate with plenty of supple tannin, pleasantly dry, firm pressure in the finish.

Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.

The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

Pago de Carraovejas Cuesta de las Liebres 2019 is a red wine that masterfully blends finesse with a robust flavor profile. Upon olfaction, it unveils a complex array of nuances, with blueberries and blackberries taking center stage, complemented by undertones of sweet spices and hints of graphite and chocolate. On the palate, it is rich and full-bodied. This red wine boasts silky tannins, an extensive and enduring finish, and the exquisite signature of an outstanding vintage.

Pago de Carraovejas El Anejon is made from 93%, Cabernet Sauvignon 5% and Merlot 2%.

El Anejon vineyard is a terraced plot on a steep slope, oriented toward the sun and with great views of the Castle of Peñafiel. The soil of the narrow terraces has a compact, loamy limestone texture. The presence of the white-colored limestone calcium salts contributes to a distinctive minerality in this wine. Only made in exceptional vintages.

Depending on which plot they come from and the time they enter the winery, the grapes may be deposited in cold chambers to prevent oxidation and preserve the aroma. We carry out a two-part selection: first on the vine, where we choose the bunches, and then on a belt in the winery, where we remove the grapes that do meet the necessary conditions. The grapes enter the winery and are transported with the assistance of gravity. The deposits are filled slowly and gently. Depending on the characteristics that we detected when tasting the grapes, we ferment them either in stainless steel deposits or French oak barrels. There are also noticeable hints of leather and liquorice, resulting from the mingling of the French oak and the aromas inherent in this variety of grape. 

In the mouth, the wine has a smooth texture but fills the palate with balanced flavours, including fine tannins, which help extend the life of the wine. The finish and aftertaste are both long and elegant.

Selected harvest with yields limited to 5000 kg per hectare. The harvest begins in early October, starting with the most mature parcels. Once the grapes are brought into the winery, the tanks are seeded with indigenous yeast (start culture) and the alcoholic fermentation begins. During the barrelling period, which lasts 30 days, the wine is crushed and pumped over daily, all the while controlling the density, temperature and evolution of the yeast. At the end of this fermentation, the tanks are emptied and the wine taken for malolactic fermentation.

The malolactic fermentation begins without the addition of bacteria. The temperature is held steady at 20ºC for period of 22 days, during which we monitor the levels of malic and lactic acids. When the malic acid content is less than 0.1 grams per litre, the wine is decanted to separate the lees and is transferred directly to the barrels without undergoing any type of filtration, clarification or cold treatment.

The wine is aged for twelve months in new and semi-new French oak barrels (no more than three years old). At the end of this period, it is taken to the tank for homogenisation, where it undergoes light filtration through cartridges (open pore) and is then bottled.

This is a single vineyard, from the parcel "El Nogal" located in the town of Mambrilla de Castrejon grown at 850 meters above sea level. (2750 feet).

A hillside of tinto fino vines red in the village of Mambrilla, a short distance from the winery. Uninterrupted views of the Duero, the wind stirring the airy branches of the large walnut tree that guards the vineyard. A place with a special gift. Its sandy, stony soils, a feeling of harmony and a special microclimate: everything seems to enhance the talent of its surroundings.

We have been vinifying the evocative grapes of this plot for the past few years to produce an endlessly charming wine. Overwhelming, powerful and exquisite. With a vitalising force.
