Chavy-Chouet Bourgogne Rouge La Taupe is made from 100 percent Pinot Noir.
Chavy-Chouet's Pinot Noir is classified as humble Bourgogne Rouge, but the fruit for it comes from an excellent single-vineyard site near Pommard. La Taupe's parcel was once part of the Pommard AOC.
The wine is juicy with a great mouthfeel. It has classic Bourgogne Rouge aromas, with a candied cherry character as well as strawberry, raspberry and spice, yet the structure and length of finish reminds one of a Pommard - ripe & rich with a bigger body.
Average age of the vines: 70 years old.
Density of planting: 10,000 vines per hectare.

100% distemmed.
Very little intervention. Less pigeage (punch down of the cap) but some remontage (pump-over)
Gigondas offers a rich bouquet, with fine, fruity and spicy aromas and a sunny color ranging from ruby to dark garnet. The nose reveals a bouquet of red fruits and very ripe black fruits. On the palate, the Gigondas is full-bodied with a fleshy attack. The Grenache Noir releases all the expression of its power in this shimmering red wine with marked tannins, a structured body and a great aptitude for aging. Syrah and Mourvèdre reinforce their garnet color and spice up their aromas.

Wine Enthusiast (2022) - This is a voluptuous, mouth-coating Grenache augmented by smaller proportions of Syrah and Mourvèdre. Its black plum and mulberry flavors are intensely ripe and juicy, but it's a nuanced wine accented by flecks of peppery spice, espresso and violet, and an upright streak of acidity that anchors the finish Approachable young, but should improve further well through 2035.
