The Dashe Cellars Estate
Dashe Cellars were founded in 1996 by Anne and Michael Dashe, a husband and wife winemaking team who created a small winery that focuses on wines from Sonoma County. Since Anne's winemaking origins are French and Michael's are American, they wanted to elaborate distinctive wines that offered the best from both of their countries of origin.
The Dashe Cellars Vineyards
They have decided to concentrate on single vineyard sites - to locate small independent vineyards and create wines that reflect the vineyards unique soil, climate, and regional characteristics. They use traditional fine winemaking techniques such as small lot fermentations, the use of indigenous yeast on the grapes to conduct the fermentations, little or no fining or filtration, and small barrel aging. All the wines are made, tasted, and blended by the production team of Michael, Anne, and Matt Smith (enologist).

Domaine Zind-Humbrecht Riesling Heimbourg is made from 100 percent Riesling.
Bright yellow color. The nose expresses an immediate sense of strong mineral and limestone influence. After aeration or decanting, it will show eventually bright citrus, bergamot, spices and an expected slight austerity. It is very expressive today, but it is easy to see that this wine still has much more to show in the future. The mouth is tight, dry, showing a bright acidity and elegant finish.

What a fascinating peachy, flinty and smoky nose this great dry Riesling has. Power, energy and vitality on the generous palate, but also a profoundly chalky and flinty minerality. Long juicy finish that pulls you back for more. From biodynamically grown grapes. Drink or hold.

Ottella Lugana DOC Le Creete is made from 100% Trebbiano di Lugana (same as Verdicchio)
The grapes for this wine come from the estate vineyards in San Benedetto di Lugana.
Golden, warm, intense straw yellow. Exotic notes of pineapple and grapefruit with delicate minerality.
Finesse yet a strong character. Rich and well balanced, firm, mineral wine with a superb pulp.
Pairs best with sea or lake fish to bring out its outstanding features; goes well with white meat and soup, and has quite a surprising affinity with full-flavored and blue cheeses.
