Corvina is an Italian wine grape that is mainly grown in northeast Italy in the region of Veneto. This variety is also known as “Corvina Veronese,” “Cassabria,” or “Cruina”. Corvina is often blended with other varieties to create red wines with soft fruit flavors. Corvina creates light red colored wines with a light almond aroma. The finishing note is recognized with a tart cherry taste. Winemakers in parts of Valpolicella will use barrel aging to give the taste of the wine more depth. In order to produce fruit, the Corvina vines must be trained so it can produce more fruit. This Italian variety is sometimes confused with Corvione, a red grape variety used to create straw wines. DNA evidence shows that Corvina and Corvione are actually two separate varieties, and Corvina is actually related to the Rondinella grape variety from Venice. The thick skins on this wine grape makes it a candidate for the appassimento method of drying grapes to create wines such as Recioto. This gives the wine a deeper flavor of raisin and dried fruits. Corvina is often blended with other varieties such as Rondinella and the Valpolicella Blend. Corvina is known for its light color and tannins, and is more likely to be paired with other wine grape varieties. Corvina pairs perfectly with barbecue pork, mushroom soup, or a beef quesadilla.

Timeless Notes:
Dark cherry in color, firm on the palate with a vibrant acidity underbelly. Thought lush on the palate the flavors are complex and elegant from entry to mid-palate with hints of currant and wild berries. The finish brings in a touch of tobacco and leather notes ,classic examples of this region, with more ripe fruit flavors that linger on long strain tannin finish. Complex with depth and elegance on the palate. This one is drinking now, but can handle more time in the cellar with ease. An excellent value in the Riserva category.

Ripasso Superiore DOC is an elegant and refined wine, showing a beautiful and intense ruby color. Spicy, with cherry hints and wild berries notes, it features great personality and complexity. In the palate it is rich, very fruity, elegant and still young but already very well-orchestrated, with the typical notes of wild berries that blend well with the complexity of the wine.

If I was forced to choose a number of wines that can steer the anachronistic Ripasso category into a brighter future, this would be among a very few. A mid-weighted, streamlined expression with just enough fruit on the bones. Think strawberries, lilacs, Asian plums, cloves and a hint of licorice. A noble, almost alpine bitterness lifts the finish. Brilliant. Drink or hold.

This is an excellent red wine with a supple body. The techniques used to produce this wine is typical from the area.
Excellent with cold cut, fresh and mature cheeses. Perfect with red meat and game.
Late harvest style Corvina aged on Amarone lees. The must of Amarone remains in the vat and instead of being pressed, it is topped up with high quality Valpolicella before being left to referment for about 10-15 days.

Fresh violets, lilac, wild plums, allspice and wild herbal aromas pour from the glass. The focused palate shows tart cherry preserves, warmed cloves, roasted coffee and dark chocolate that finishes with a crushed chalk minerality. Ripa Della Volta Amarone della Valpolicella 70% Corvina, 20% Corvinone, 5% Oseleta and 5% Spigamonte.
The vineyards are located at an elevation of 300-600 metres above sea level, with a south-southwesterly exposure. Training system: Guyot.
It features an intense red color with garnet highlights. The nose offers up a rich variety of aromas with fruity notes of cherries, morello cherries and plums, spices and hints of chocolate. It is round and caressing with soft, mellow tannins balanced by excellent acidity that enhances its drinkability and ageing potential.
It is a wine with a marked personality, great finesse, elegance, and extraordinary longevity.
It pairs well with main dishes such as game and roasts, but also cured meats and mature cheese.

Strong, dark ruby with a light garnet edge. Intense and very clearly defined nose with notes of ripe plums, dark forest raspberries and some tobacco in the background. Round on the palate with plenty of supple tannin, pleasantly dry, firm pressure in the finish.

Beginning in 1993 and following in the tradition of great Bordeaux estates, Opus One created a fine second wine called Overture. Every acre of the estate vineyard is meticulously farmed with the attention to detail and singular focus required to produce Opus One. This scrutiny carries through the blending process and certain lots will not be included in the final Opus One blend. Yet, when these lots are afforded additional time in barrel along with the added flexibility of blending across multiple vintages, the final wine achieves a remarkable elegance and complexity.
Overture displays a vibrant garnet color with expressive aromas of fresh red fruit. Notes of bright cherry and red currant are underpinned by more earthy tones of ground cocoa, cedar and vanilla. Extended barrel aging gives the wine an elegant texture accentuated by round tannins and a soft mouthfeel.
Kershaw Smugglers Boot Pinot Noir is made from 100% Pinot Noir made from French clones PN667, PN115 and PN113.
The name derives from the time of trade embargoes in South Africa when growers & winemakers smuggled grapevine material into the country by hiding the cuttings in Wellington boots. The Smuggler’s Boot range celebrates that ingenuity.
Attractive strawberry, savory and star anise spice linger on the nose. Juicy and sumptuous on the mid palate with breadth of flavor offset by a nimbleness of fresh acidity, friable tannins and sinuous mouthfeel, this Pinot unwraps to earthy, fennel, chocolate and a hint of incense to a long supple finish.
Handpicked grapes were first bunch sorted on a conveyor before the stems were removed and the destemmed berries sorted to remove jacks and substandard berries. After a 3-day maceration in 500kg open-topped fermenters, the uncrushed grapes began a spontaneous fermentation. A gentle pigeage program was charted and the grapes remained on skins for 10-16 days.
The free-run wine was racked to a combination of 50% French oak barrels (10% new) and 50% breathable plastic eggs with the remaining pomace basket-pressed. Malolactic then proceeded followed by a light sulphuring after which the wine was racked off Malolactic lees and returned to cleaned barrels for an 11-month maturation. No finings, simply racked and light filtration prior to bottling.
Richard Kershaw’s personal suggestions for dishes include charcuterie, its salt and fat being complemented by the delicate spicy notes and fruit; Pork loin with honey, pepper, and lemon-zest glaze; Carpaccio; duck cassoulet; ovenroasted monkfish with garlic mashed potatoes; seared tuna; wild mushroom risotto; a simple beet salad with some hazelnuts and ricotta cheese; a slice of Brie or Gorgonzola dolce.
