Cabernet Sauvignon is grown in almost every region that produces wine, and is one of the most popular red wine grape varieties in the world. Today, cabernet sauvignon can be found in different regions all over the globe, including Canada, France, or the Napa Valley in California. Cabernet Sauvignon is a popular variety that is fairly new. Sometime in the 17th century in the Southwestern part of France, a accidental mixture between Cabernet Franc and Sauvignon Blanc crafted Cabernet Sauvignon. Cabernet Sauvignon was the most planted red wine grape variety for most of the 20th century until Merlot became even more popular. The thick skin and tough vines allow the variety to endure harsh weather, rot, and other difficult conditions, and the flavors produced by the grape are consistent. Cabernet Sauvignon is easily cultivated grape, which is why it is such a popular choice. This variety is also called the “King of Red Wine Grapes” and includes high tannins and dark rich flavors, including cherry, blackberry, vanilla, plum and tobacco aromas. Cabernet Sauvignon mixes perfectly with red meats, strong cheeses, dark chocolate, red pastas, and also blends well with other varieties such as Merlot. The blend reduces the strength of the grape and injects soft, fruity tones into the mix.

Lots of pure cassis and blueberry- like fruits as well as licorice, graphite, and crushed rock-like minerality, emerge from the 2018 Cabernet Sauvignon Hillstone Vineyard. It's a full-bodied, opulent, powerful Cabernet Sauvignon that doesn't pull any punches on the fruit or texture scale, yet has ripe, present tannins, a light, elegant texture, and a great finish. Give bottles an hour in a decanter if drinking any time soon, or better yet, hide bottles for 2-3 years. It's going to evolve for 15+ years in cold cellars.

The 2018 Cabernet Sauvignon Spring Mountain District is a monster of a mountain Cabernet that has a primordial bouquet of blackcurrants, smoked earth, chocolate, and graphite. While Spring Mountain wines tend to be more aromatic and complex right out of the gate, that’s not the case here, and this is going to need bottle age to round into form. Full-bodied on the palate, with a rich, concentrated mouthfeel, it has serious tannins, notable purity of fruit, and a great finish. With air, it picks up more and more classic Spring Mountain floral and exotic notes, and it’s flawlessly balanced, with gorgeous tannins and a great, great finish. This is a brilliant wine in the lineup and unquestionably one of the true gems from Spring Mountain in 2018. Give bottles 4-5 years and enjoy over the following 2-3 decades.

Deep garnet-purple colored, the nose is a little closed to begin, slowly unfurling to reveal earthy/rocky scents over a core of black currants, blackberries and mulberries with emerging hints of pencil lead and green peppercorns. Medium to full-bodied, the palate has a rock-solid frame of firm, grainy tannins and bold freshness with loads of mineral suggestions intertwined with the black fruits, finishing long with some evocative floral notes coming through

Swaths of imposing Howell Mountain tannins wrap around the palate. Even so, the 2018 has more than enough volume and resonance to balance things out.

The Cabernet Sauvignon-dominated 2017 Chester Kidder is another more closed, reserved wine that's loaded with potential. Cassis, toasted spices, violets, and leafy herb notes give way to a rich, full-bodied red that has ripe, velvety tannins, a rounded, mouth-filling texture, and one heck of a great finish. Give bottles 3-5 years if you can and it should be very long lived.

Balanced and medium to full-bodied, with a terrific sense of freshness as well as building tannins, it's going to benefit from 2-4 years of bottle age and have two decades of longevity.

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet.
Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.
Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.
Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. The finished wine was aged 22 months in 90% new Vicard French oak barrels (Randy's cooper of choice at Dunn Vineyards as well).

Like the last several growing seasons, 2016 was another hot year that required extra care in the vineyards. Building on the success of our canopy managment program over the last few vintages, we worked with growers throughout the season to encourage growth of the canes and outside foliage to protect against the sun while opening up the fruit zone for even maturation. Warm temperatures in the fall hastened ripening, but the Columbia Valley's cool autumn nights protected the grapes' acidity, yielding bright, vibrant wines that will drink well in their youth but also promise to bring enjoyement to those who cellar.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. All other varieties were fermented in traditional stainless steel tanks, with select lots enjoying longer skin contact to enhance the wine's dark color and mid-palate. Maipe was the Lord of the Winds for the ancient Andean Indians. He is still called upon to clear the skies after heavy rain, or to temper the summer heat.

The finish has good aromatic length and introduces a touch of liquorice and pepper.

Soil type Extreme north of Châteauneuf du Pape. This plateau is made with a high quantity of red clay mixed with rocks. This area is considerated to be one of the best to produce rich and powerful red wines. By definition, LES ORIGINES will always deliver a great complexity and ageing potential. This full-bodied effort reveals an intriguing tautness on the palate, with tart, redcurrant and pie-cherry notes juxtaposed against hints of dark chocolate. It seems to have tightened up a bit since I tasted it last year. Mt Monster Cabernet Sauvignon is 100 percent Cabernet
Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.
Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.
