Beckstone Cabernet Sauvignon Horse Heaven Hills is made from 90% Cabernet Sauvignon, 7% Merlot, 2% Muscat Canelli and 1% Malbec.
Deep ruby in color with a nose of sweet fruits, the wine opens with notes of ripe strawberries and a delicate dusting of cocoa powder. Earthy spices begin to layer mid-palate, as well as notes of blueberries and a balanced minerality. The finish is soothing with a lingering sensation of dark caramel and toffee.

Winemaking: Our Cabernet is fermeneted in static fermenters at controlled temperatures to retain the varietal aromatics. Once complete the wine is left for 7-1- days on skins to aide in the extraction of soft fleshy tannins and build wine structure. French and American oak has been used sparingly to ensure maximum fruit expression is retained in the final wine.
Tasting notes: Deep purple in colour. Classic aromas of lifted blackcurrant, blackberry and mint on the nose. Flavours follow through of sweet berry-fruit accented by fresh muddled mint. Elegant, structured palate with big velvety tannins.

Silver Oak Alexander Valley Cabernet Sauvignon is made from 95.2% Cabernet Sauvignon, 2.5% Cabernet Franc, 1.9% Merlot, 0.4% Petit Verdot
The Silver Oak Alexander Valley Cabernet Sauvignon 2019 has notes of red cherry, raspberry, blackberry, iris, vanilla and clove. Sestina: This wine is a blockbuster, with black currant, black raspberry, saddle leather, freshly tilled earth, vanilla, and violet on the nose. Exceedingly rich and balanced on the palate, with great poise and structure for long aging. The finish echoes with fresh black fruits, minerally touches, and floral notes.

The 2020 Sestina showed beautifully, with lots of ripe black fruits, tobacco, and spring flower notes in a medium to full-bodied, fresh, focused, elegant style. It has fine tannins and a great finish and should drink nicely right out of the gate. The tannins here are terrific.

The 2020 Cabernet Sauvignon is cut from the same cloth as the 2019, yet is perhaps richer and more expansive, with slightly less elegance. Currants, chocolate, toasted spices, and tobacco all define this beauty, and it has full-bodied richness, flawlessly integrated oak, good acidity, and a great finish. Anyone doubting the quality that can be achieved in Cabernet Sauvignon from Paso Robles owes it to themselves to try one of these wines.

Heritage School Missiaens Hillside Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
A steep, rocky site with red volcanic soils results in our most structured and concentrated wine. Planted in 1998 using 110R rootstock and clone 337 Cabernet Sauvignon our Hillside Vineyard produces wines as breathtaking as the views from its slopes. These tiny, dark blue berries ripen near the end of September thanks to cool afternoon temperatures allowing for increased hang time and developed flavors.

A different take on Chilean Cabernet, with grapes from a high-alitude vineyard in the foothills of the Andes, where Summer temperatures never exceed 30C/85F. The grapes ripen over a longer growing season and the higher levels of UV help fix color and flavor profile. This is a fresher take on Cabernet Sauvignon when compared to the typical highly concentrated Cabs that are considered the standard from Chile. The name de Compostella (meaning “field of stars” or “compilation of stars”) was chosen to reflect the fact that each component is crafted to stand alone as a world class varietal wine. Spinona Bricco Faset Barbaresco is made from 100 percent Nebbiolo.
This single-vineyard Barbaresco comes from Pietro Berutti's 8 hectares of coveted vineyards on the top of the historic hill, Faset. It is 270 meters above sea level with a south, south-east exposure. The vines are an average of 35 years old. Only organic farming practices are used. The natural fertilizer comes from the 100 head of cattle that they have and no herbicides or pesticides are used.
Barbaresco shows a deep ruby red color with garnet reflections. An intense bouquet with hints of ripe cherries, wild berries and spice. White pepper, licorice and mint blend with enticing floral notes. Mouth-filling and well-structured with a full, velvety body and an austere and long finish.
HARVEST: late October. The grapes are harvested by hand in perforated baskets to allow air to pass through the bunches. The pressing is soft. Cold maceration for 24 hours at 12°C (for certain years).
WINEMAKING: Soft pressing with an initial cold maceration on the skins for 24 hours at 12C. Specially selected yeasts are used. Fermentation takes place for 12 to 14 days in stainless steel at 28-29 °C under temperature controlled conditions. There is a pumping over on the skins. After malolactic fermentation, the wine is racked and goes through a delicate pressing to obtain only the best wine.
AGING : 12-15 months in large 25 hectolitre wooden barrels of Allier and Slavonian oak.
REFINING: in the bottle for 12-15 months in a temperature-controlled environment.
Excellent with game, red meats, truffle dishes and aged cheeses.
