Bavencoff Montagny Blanc is made from 100 percent Chardonnay.
This Montagny presents a typical robe of a Burgundy Chardonnay: A pale yellow color with discreet green reflections. The color will change to golden yellow with age. On the nose, it develops delicate honey and vanilla aromas. On the palate, this wine is full-bodied, it offers a slightly oily texture typical of the great whites of Burgundy, rich and fresh flavors (vanilla, honey, golden apple, toast). The finish is long and mineral.
This wine goes perfectly with veal in sauce, scallops in butter and herbs, and most fish. Also to drink with hard mountain cheeses: Comté, Beaufort.
Bavencoff Bourgogne Blanc is made from 100 percent Chardonnay.
This Bourgogne Chardonnay is fresh and bright. The aromas are expressive with Honeysuckle, Broom and Mushroom. A nice balance between the acidity and the fruitiness, complementing the minerality. It will drink well during its youth but will gain some extra aromatic complexity after a few month in the cellar.
Very pleasant as an aperitif. Our Bourgogne Chardonnay also goes very well with cold meats, fish, grilled and marinated vegetables as well as goat cheese.
Wine was slightly filtered before bottling.
100% Malolactic fermentation done.
Aged 14 months. 80%of the wine was aged in Stainless steel tanks with 20% was aged in French Oak barriques (228 liter barrels).
Bavencoff Meursault Blanc is made from 100 percent Chardonnay.
Clear golden and green robe. Meursault shows a green golden color, leaning towards bronze as it ages. Limpid and brilliant, it exhibits silver highlights. The young wine is redolent of toasted almonds and hazelnuts in a floral and mineral (flint) setting. Butter, honey, and citrus fruits are also present. On the palate it is rich and ample with a nice balance between freshness and smooth nutty flavors. .
Aged in French oak barrels (50% new).

Bavencoff Pernand Vergelesses Blanc is made from Chardonnay.
The wine offers a white gold or pale yellow color turning into darker gold with age. It boasts aromas of white flowers, (may, acacia) developing into notes of amber, honey and spices. On the palate it is mineral, harmonious and easy to like.
Aged in new oak barrels (Allier).
Sushi, fresh-water fish in white sauce, and for pasta or a seafood risotto.
Grand Veneur Chateauneuf du Pape Blanc Le Miocene is made from 60% Clairette, 40% Roussanne
Pale yellow colour with hints of green, aromas of white flowers (may blossom, honeysuckle).
The palate is pleasantly balanced between liveliness and roundness, which brings out characteristics of dried apricot, honey and elderberry. A Châteauneuf du Pape white displaying a great finesse.

Ferme Blanche Cassis Blanc is made from 40% Marsanne, 20% Ugni Blanc, 20% Clairette, 10% Sauvignon Blanc and 10% Bourboulenc. .
The wine has a pale golden color and offers subtle aromas of citrus fruits, peach and apricot, and floral notes of acacia and linden. Crisp and lively on the palate, good tension and length and a refreshing finish.

Jean-Michel Sorbe Reuilly Blanc is made from 100 percent Sauvignon Blanc.
The first nose is expressive and opens up to notes of acacia, citrus (lemon, grapefruit). Full on the palate with lovely freshness. This wine boasts nice balance and good length.
The vines are 15 to 20 years old and are located on the left bank of the Cher River, southwest of Quincy. This vineyard enjoys good exposure to the sun and overlies hillocks composed of sandy alluvial deposits and gravel dating back to the Quaternary Period. Each terroir is managed with minimal intervention in an environmentally friendly approach. Vinification: Slow pressing. The 2019 Chardonnay Three Jacks Vineyard, from vines planted in 1995, was barrel fermented and matured in 31% new French oak for 14 months. It's one of the best iterations I've tasted, combining expansive flavor and texture with precise, laser-like acidity. It offers delicate, pure scents of apricot, dried tarragon, white pepper and citrus blossoms with a stony undercurrent. The medium-bodied palate has dynamic energy from its oily texture and shimmery acidity, and it finishes with tense, mineral-driven flavors. It has much more to give as it unfurls in bottle and will be long lived in the cellar.

Saumaize Michelin Pouilly-Fuisse Ronchevats is made from 100 percent Chardonnay.

"The 2020 Pouilly-Fuissé Les Ronchevats, which comes from Triassic clay soils, has a slightly more honeyed bouquet and as such, maybe does not quite transfer the terroir as much as the Domaine's other cuvées. The palate is actually better than the nose, quite saline and energetic, very focused with a lovely bitter edge emerging towards the finish. Maybe the aromatics will up their game in bottle? Give it a couple of years.

Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.
Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.
The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. Johann Michel Cornas Cuvee Jana is 100% Syrah.

Manual harvest, selection of the grapes from the "Chaillot" parcel, full clusters, fermentation in tanks for 3 weeks, daily remontage and pigeage.
